SPINACH-ARTICHOKE CHEESE BALL | BETTER HOMES & GARDENS



Spinach-Artichoke Cheese Ball | Better Homes & Gardens image

For us, it's not a true party until someone breaks out a cheese ball. This creamy cheese ball recipe also takes a cue from artichoke dip, so it's like enjoying two favorite party appetizers at once.

Number Of Ingredients 11

1 8 ounce pkg. cream cheese, softened
1 5.2 oz pkg semi-soft cheese with garlic and fine herbs (such as Boursin)
1?½ cups finely shredded mozzarella cheese (6 oz.)
½ 10 ounce package chopped frozen spinach, thawed, drained, squeezed dry, and finely chopped
1 6 ounce jar marinated artichoke hearts, drained, chopped, and patted dry
½ cup roasted red sweet peppers, drained, chopped, and patted dry
¼ cup chopped green onion
¼ - ½ teaspoon crushed red pepper (optional)
¼ cup toasted sliced almonds
¼ cup finely shredded Parmesan cheese
Toasted baguette slices and/or pita chips

Steps:

  • In a large bowl beat the cream cheese and semi-soft cheese with a mixer on medium until fluffy. Stir in the next six ingredients (through crushed red pepper) until combined. Shape cheese mixture into a ball.
  • In a shallow dish, combine nuts and Parmesan. Roll the ball in nut mixture to coat. Cover and refrigerate until ready to serve. Let stand 15 minutes before serving. Serve with toasted baguette slices.

I don't normally like cooked spinach but I fell in love with this at first bite. Sooo good!

Number Of Ingredients 6

1 (10 ounce) package frozen chopped spinach, thawed
1 bunch green onions, finely chopped (white parts only)
4 eggs, beaten
1 (16 ounce) package cottage cheese
2 cups shredded Cheddar cheese
¼ cup crushed croutons

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch pie or quiche pan.
  • Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in green onions, eggs, cottage cheese and Cheddar cheese. Pour mixture into prepared pan.
  • Bake uncovered in preheated oven for 45 minutes. Remove from oven and sprinkle with crushed croutons. Return to oven and bake for an additional 15 minutes, until eggs are set.
