Yield 4 sandwiches

Number Of Ingredients 12

1 cup drained tuna, flaked with a fork
¼ cup finely diced celery (or other crunchy raw ingredient, such as bell pepper or apple)
3 tablespoons finely chopped red onion (or other oniony thing, such as scallions or shallots)
2 to 3 tablespoons drained pickle relish (sweet, savory, or sweet-hot, or use chopped pickles, capers, olives, or other pickled vegetables)
1 tablespoon pickle brine (or other acidic liquid, such as lemon juice, olive brine, interesting vinegar, or hot sauce)
1 tablespoon Dijon mustard (smooth or wholegrain, or another seedy mustard, such as Creole or spicy brown; avoid yellow ballpark mustard)
1 tablespoon finely chopped fresh herbs (such as chives, tarragon, basil, dill, or parsley)
¼ to ? cup mayonnaise
Salt and pepper, to taste
8 large slices of your favorite sturdy sandwich bread
Soft butter or mayonnaise for the outside of the bread
8 slices or 4 ounces (1 cup) shredded cheese

Steps:

  • Stir together everything in a bowl, mixing it well, leaving the mayonnaise for last. Add mayonnaise a spoonful at a time, just enough to bind everything together. The salad should hold its shape on a spoon. (You can make the tuna salad up to three days ahead. Store covered and refrigerated. Drain off any accumulated liquid and stir well before using.)
  • Cover one side of each bread slice with butter or mayonnaise, spreading it all the way to the edges. Turn the slices over and cover with cheese, either sprinkling it or tearing the pieces to fit. Top with tuna salad.
  • Close the sandwiches and cook on a griddle or in a large skillet over medium-high heat until deep golden brown and crisp, about 3 minutes per side, pressing lightly with the spatula. Serve immediately.

Tuna melts don't have to be filled with calories and fat and light tuna melts don't have to be lacking in flavour! Try this one and I guaranteee you will be pleasantly surprised!

1 6-ounce tin of albacore tuna in water, drained and flaked
7 TBS good quality mayonnaise, divided
1 TBS sweet pickle relish
2 spring onions, trimmed and chopped
1/4 cup chopped celery
1 tsp Dijon mustard
salt and pepper to taste
8 slices bread
4 processed cheese slices

Steps:

  • Mix together the tuna, 3 TBS of the mayo, onion, green pepper and seasonings.
  • Lay out 4 bread slices and cover them with tuna mixture, 1 cheese slice and finally the second bread slice. Spread outsides of each sandwich with 1 TBS of mayonnaise.
  • Heat a large skillet over medium heat. Place the sandwiches in the skillet and cook until lightly browned on one side before flipping over to brown the other side.
  • Keep warm in the oven while you cook the remaining sandwiches. Serve immediately.

  • Preheat oven to 400°. In a large bowl, whisk together mayonnaise, lemon juice, and red pepper flakes (if using). Drain tuna then add to mayonnaise mixture. Top an unbuttered side with approximately 1/2 cup of tuna salad, 2 to 3 slices tomato, and 2 slices of cheese. Top with another slice of bread, buttered side facing up. Repeat with remaining ingredients and place on a large baking sheet. Bake until cheese is melty, 5 to 8 minutes.

  • Drain water or oil from tuna; fork tuna into a medium bowl. Chop onion, celery, and parsley; mince garlic; add ingredients to the tuna. Add mayonnaise, olive oil and cheese. Combine all ingredients until well incorporated. Salt and pepper, to taste. Place a non-stick skillet on the stove; add 1 T. olive oil; when skillet is hot, take a slice of bread and generously spread butter on one side; place bread buttered side down in hot skillet. Scoop about 2 T. tuna salad on the bread while it is browning. Butter another slice of bread and place non-buttered side on top of tuna. Use a spatula to check if bread is toasted brown; if it is, flip tuna melt over; grill until golden brown. Place tuna melt on paper towels; allow to cool a little. Serve. 2 servings.
