The Pioneer Woman's easy homemade Applesauce recipe is way better than the store-bought stuff and takes only 35 minutes to make.

Ingredients

6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

Preheat oven to 350ºF. Line cookie sheets with parchment. Whisk flour, cinnamon, allspice, nutmeg, baking soda, baking powder, and salt. Set aside. Cream butter and sugar until light and fluffy. Beat in egg, applesauce, and vanilla bean paste until combined. Add the flour mixture and mix on low until combined. Scrape down bottom and sides of bowl. Portion onto prepared sheets using a 2-tablespoon cookie scoop. Bake for 12 minutes or until the tops bounce back when lightly pressed. Remove to a wire cooling rack. Once completely cooled, make the glaze. Whisk powdered sugar, milk, and vanilla bean paste. The mixture will seem thick at first, then it will loosen. Spoon or pipe over the cooled cookies.

I used Mott’s cinnamon-applesauce and Krusteaz buttermilk pancake mix. I left out the lemon juice, added buttermilk instead, a little bit at a time and blended the batter.
