This is a very simple dinner that goes back in time. The time when foods were simple and fed alot. I am putting together a cookbook for these times. I love old country cooking and love to bring them back for simple pleasures for todays busy schedules, maybe just for a moment, to slow it down just a little and enjoy. This came from who else but Mr.Food.

1 tablespoon(s) vegetable oil
1 pound(s) smoked turkey or beef kielbasa, cut into 1/2-inch slices
3 cup(s) cooked rice
1 - can (about 16 ounce) red kidney or pinto beans, rinsed and drained
1/2 cup(s) bottled hickory-smoked barbecue sauce

Steps:

  • In a large skillet, heat oil over medium-high heat; brown kielbasa, drain excess fat, then return kielbasa to the skillet. Stir in rice, beans, and sauce. Cook over medium high heat until thoroughly heated, about 5 minutes, stirring occasionally.

1 small onion, chopped
1/4 cup chopped green pepper
1 garlic clove, minced
1 can (7 ounces) whole kernel corn, drained
3/4 cup kidney beans, rinsed and drained
1/2 cup tomato sauce
1 tablespoon chili powder
1/8 teaspoon pepper

Steps:

  • In a large saucepan, cook the beef, onion and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the corn, beans, tomato sauce and seasonings; cover and cook 5-10 minutes longer or until heated through.
