CHRISTMAS PANCAKES RECIPE -

Wonderful for a Christmas morning brunch, don't wait until the holidays to make these they are wonderful at anytime ---adjust the amount of sugar to suit taste, I strongly suggest for this and for any pancake recipe to allow the batter to sit in the refrigerator for at least a few hours this will improve the texture of the pancakes --- these are wonderful served with orange marmalade :)

Number Of Ingredients 14

1 cup all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon ginger powder
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/8 teaspoon clove
1 large egg, beaten
1 cup buttermilk
2 tablespoons sugar (increase for more for a sweeter pancake)
1 tablespoon molasses
6 tablespoons melted butter (or use half of each) or 6 tablespoons vegetable oil (or use half of each)
marmalade or pancake syrup

Steps:

  • In a large bowl combine first 8 dry ingredients.
  • In another small bowl whisk together the egg with buttermilk, sugar, molasses, and melted butter until very well combined; add to the flour mixture and mix lightly until just until moistened (a few small lumps in the mixture is okay, do not overmix).
  • At this point you may refrigerate for a few hours until ready to use.
  • Grease a griddle, then drop about 1/4-cup batter for each pancake into the pan.
  • Cook the pancakes until the tops are covered with bubbles and the edges looked cooked.
  • Turn and cook the other side.
  • Serve with marmalade.

Use up leftover Christmas pudding in this pancake recipe served with brandy butter. These make a great (if rich)  Boxing Day breakfast and are ready in just 15 minutes.

Number Of Ingredients 7

150g plain flour
2 tsp baking powder
½ tsp bicarbonate of soda
3 tbsp caster sugar
2 large free-range eggs
125ml-150ml milk
125g leftover Christmas pudding or cake

Steps:

  • Sift the flour, baking powder and bicarbonate of soda into a bowl with the caster sugar. Mix, then make a well in the centre and gradually stir in the eggs and milk, until you have a smooth batter.
  • Roughly chop the leftover Christmas pudding and mix into the batter. Stand for 10 minutes, then wipe a frying pan with a little vegetable oil and put over a medium heat.
  • When hot, pour 2-3 large spoonfuls of the pancake mixture into the pan. Once bubbles form on the surface, flip over for another minute, then stack on a warmed plate. Repeat to use up the remaining batter, then serve with leftover brandy butter.

  • In a medium mix together eggs and milk. Add flour and cinnamon to the egg/milk mixture and stir until there are no lumps. Add more milk if it is too thick. Heat a large fry pan over medium heat.Add a little olive oil to the fry pan and scoop 1-2 tbsp of pancake batter into the fry pan per pikelet. You may be able to cook a few at a time depending on the size of your frying pan. Wait until bubbles start to appear on the top of the pikelet (around 2-3 mins), then turn over and cook for another 1-2 mins. Until both sides are browned.(Decorations - Option 1): Slice each peach into 8-10 segments, slice bananas into small discs. Lay one pikelet on a plate and using 4-6 pieces of peach, lay create 2 antlers (2-3 pieces per antler). Place one slice of banana in the middle of each pikelet and use 2 blueberries as eyes. Two almonds can be placed between the peach antlers to look like reindeer ears. (Decorations - Option 2): Slice the tops off of the strawberries and cut in half, cut little chunks out of the strawberries to make them look similar to reindeer antlers. Slice bananas into discs. Lay two pikelets on a plate, overlapping slightly. Where they overlap add a slice of banana. Place two blueberries to make eyes, and on the edge of the pikelet, above the eyes, place two strawberries to look like antlers.
