Chai is an Indian spiced tea. This rich version is a wonderful complement to a thick slice of Sweet Potato Pound Cake.

4 cups milk
1 cup whipping cream
½ cup firmly packed light brown sugar
4 ounces chopped dark chocolate
1 (1-inch) piece fresh ginger, sliced
6 cardamom pods
1 star anise
¼ teaspoon whole cloves
¼ teaspoon ground cinnamon
¼ teaspoon black peppercorns
4 regular-size black tea bags

Steps:

  • Bring first 10 ingredients and 2 cups water to a boil in a large saucepan over medium-high heat, stirring occasionally until chocolate is melted. Add tea bags; cover, reduce heat to low, and simmer 10 minutes. Pour mixture through a fine wire-mesh strainer into a heatproof pitcher, discarding solids. Serve warm or chilled over ice.

1 c. nonfat dry milk powder
1 c. powdered nondairy creamer
1 c. French vanilla powdered nondairy creamer
1 1/2 c. granulated sugar
1 1/2 c. unsweetened instant tea
1/2 c. unsweetened baking cocoa powder
2 & 1/2 tsp. ground ginger
2 & 1/2 tsp. ground cinnamon
1 & 1/8 tsp. ground cardamom
1 & 1/8 tsp. ground cloves

Steps:

  • In a food processor, combine all ingredients; cover and process until powdery.
  • Store in an airtight container in a cool dry place for up to 6 months.
  • To prepare 1 serving: Dissolve 3 T. of mix in 1 c. boiling water; stir well.
