50 grams Low-gluten flour
50 grams Almond powder
125 grams Egg white
125 grams Caster sugar
25 grams honey

Steps:

  • Butter: 125g, low-gluten flour: 50g, almond flour: 50g, egg white: 125g,
    Granulated sugar: 125 grams, honey: 25 grams
  • Almond flour and low-gluten flour are sifted together for later use. Almond flour is not easy to sieve and can be sieved with a slightly larger hole.
  • Heat the butter to melt and bring to a boil, continue to cook until it is slightly charred and out of the heat
  • After the butter is off the fire, sit in cold water to cool down
  • Cool down and filter for later use
  • Add fine sugar and honey to the egg whites and mix well with a manual whisk
  • Stir until there are many small bubbles in the egg white, no need to beat, then add the sifted low-gluten flour and almond flour and mix well
  • Finally, pour in the cold liquid butter, stir gently, don’t stir vigorously to prevent too much air from entering
  • Put the batter in a flower bag and squeeze 8 points into the mold
  • Preheat the oven up and down to 190 degrees, put the mold in the middle of the oven and bake
  • Bake for about 13 minutes until the surface is golden brown and the periphery is browned.
  • After the oven is out, wear the gloves to remove the cake from the mold while it is hot, and place it on the cold shelf to cool
