They're chicken lollipops - a succulent treat that lives up to the name!

10 chicken wings
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon chili powder
1 drop red food coloring
1 teaspoon distilled white vinegar
1 teaspoon chopped garlic
1 teaspoon finely chopped green chile peppers
4 tablespoons cornstarch

Steps:

  • TO MAKE MARINADE: Combine the soy sauce, red chili powder, red food coloring, vinegar, garlic and green chiles. Mix well.
  • On each chicken wing, push the meat down to one end. Marinate the wings for AT LEAST 1/2 hour.
  • Remove the wings from the marinade and add the cornstarch to the marinade to make a batter. Dip the wings in the batter and deep fry. Ready to serve!

6 full-size chicken wings
2 cups oil, for frying
2 teaspoons chilli powder
2 tablespoons ginger garlic paste
1 teaspoon pepper
1 teaspoon salt
2 tablespoons soy sauce
½ cup flour
½ cup cornflour
1 tablespoon chilli powder
1 egg
¼ cup water

Steps:

  • Add all the marinade ingredients to a bowl and mix until fully combined, set aside.
  • Slice a full-size chicken wing into three parts along the joints. Discard the wing-tip (or you can save them for making a chicken stock).
  • For the drummet (the upper, meaty, one-bone part of the wing), cut along the circumference of the thin end so that the bone and the meat are no longer connected. Then push down the meat so the drummet becomes a lollipop.
  • For the winglet (the middle, two-bone part of the wing), separate where the two bones join, and also cut along the circumferences of both ends, so the bone and the meat are no longer connected. Take out the thinner bone, and push down the meat into one end of the thinner bone.
  • Place the prepared chicken lollipops in the marinade. Stir and cover. Marinate in the fridge for at least 1 hour.
  • Mix all batter ingredients until smooth without lumps.
  • Dip the meat end of the chicken lollipops into the batter.
  • In a medium-sized pot, heat the oil to 170°C (340°F). Deep fry the chicken for 5 minutes or until the batter becomes golden brown and the chicken is cooked throughout.
  • Enjoy!

  • Prepare the chicken wings according to video directions - Each wing can be made into 2 lollipops - One portion closer to the shoulder (Meatier portion) and another portion away from the shoulder (Remove the second small bone)- This is the less meaty portion and can be stuffed so the presentation looks nice. Prepare stuffing - Season chicken mince with paneer mixed with salt, chili powder, herbs, green chili and stuff the smaller lollipops with this mixture. Prepare batter-Mix in chili powder, salt (to taste), cornflour to the beaten egg. Now we can season the prepared lollipops with soy sauce, chili /garlic sauce and marinate for some time.  Heat oil to medium heat (the lollipops need to cook completely inside hence, oil should not be too hot or else outside will brown too quickly leaving the insides uncooked). Roll the lollipops in the batter and coat it with breadcrumbs, drop gently into the oil and fry to a golden brown-not dark brown. The Lollipops can also be made without batter/breadcrumbs-Just fry them until golden brown. These lollipops can be served with a quick sauce made as below: heat oil in a pan, add crushed ginger/garlic and saute it until fragrant. Add curry leaves, chili garlic sauce, soy sauce, chopped green chilies, coriander leaves along with little water and Ajinomoto-Toss in the fried lollipops and serve immediately.

    1. Soak 6 wooden skewers in a tray of cold water – this will prevent them from burning on the barbecue later.
    2. Place the couscous in a bowl and add ½ a tablespoon of oil. Finely grate in the zest of ½ a lemon, squeeze in half the juice, then add the squeezed half for extra flavour. Just cover with boiling kettle water – get an adult to help you if you need to. Cover the bowl and put aside.
    3. Now, very carefully push 3 skewers horizontally into each chicken breast (if the skewers are too long, cut them in half). Wash your hands, then season the chicken breasts with black pepper, squeeze over the juice of ½ a lemon and drizzle with ½ a tablespoon of olive oil.
    4. You can cook the skewers on a hot barbecue or in a hot frying pan on the hob. Always get an adult to help you! Either way, cook the skewers for 8 to 10 minutes, or until golden and cooked through, turning regularly with tongs. For the final minute of cooking, grab your rosemary sprigs and use them to brush the honey over the chicken, giving it a lovely sticky glaze.
    5. To make a zingy salsa, first clean down your board. Halve, deseed and finely chop the pepper. Peel and finely chop the onion and the pineapple, then pop everything in a bowl, dress with a squeeze of lemon juice and a drizzle of extra virgin olive oil, then season to perfection. If you’ve got them, finely chop some fresh soft herbs using the cross-chop method, and add to the mix.
    6. Uncover the couscous, fluff it up with a fork, and divide between your plates.
    7. On a clean board, use a sharp knife to slice the chicken between the skewers. Check that it’s cooked and if it needs another minute or two, simply put it back on the barbecue.
    8. Place 3 chicken lollipops on each plate, and serve with the pineapple and pepper salsa, natural yoghurt, for dipping, and lemon wedges, for squeezing over.
