8 ounces rice noodles, thin (rice vermicelli)
2 tablespoons sesame oil
1 carrot, julienne cut
1/2 cup onion, sliced
1 1/2 cups cabbage, shredded
1/2 lb chicken breast, boneless and skinless cut in thin strips
2 large eggs
1 teaspoon fresh ginger, minced
1 cup bean sprouts, drained and rinsed
1/4 cup water
1/4 teaspoon brown sugar
2 tablespoons soy sauce (to taste)
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Place the rice noodles in a pot of hot water and allow them to soak for 15 to 20 minutes.
  • While the noodles are soaking, heat the sesame oil in a large skillet or wok over medium-high heat. Add the carrot and onion. Cook and stir until crisp tender. Stir in the cabbage, cooking and stirring for 1 minute longer.
  • Add the chicken. Cook and stir for a few minutes until chicken is browned on all sides. Stir in the ginger, bean sprouts and eggs. Once the eggs are cooked, stir in the water, brown sugar and soy sauce. Continue to cook and stir until the chicken is cooked through.
  • Drain the rice noodles and add them to the skillet. Season with salt, pepper or soy sauce, to taste.

refrigerated chow mein noodles or dry spaghetti

sesame oil

boneless skinless chicken thighs, cut into 1" pieces

Kosher salt

Freshly ground black pepper

clove garlic, minced

freshly grated ginger

carrot, grated

1/2

head small cabbage, shredded

1/4 c.

low-sodium chicken broth

1/4 c.

low-sodium soy sauce

2 tbsp.

oyster sauce

Thinly sliced green onions, for garnish

Toasted sesame seeds, for garnish

Steps:

Meanwhile, make sauce: In a medium bowl, whisk together broth, soy sauce, and oyster sauce.  Pour sauce over skillet and add cooked noodles, tossing to combine. Garnish with green onions and sesame seeds before serving.

  • Separate the egg noodles so they’re loose. Bring a large pot of water to the boil. Add the noodles and cook for 20 seconds. Transfer the noodles to a large bowl of iced water. Allow the noodle to cool. Then drain them well and spread them out on a large tray. Place them uncovered in the fridge for 30 minutes to dry out. In the meantime, place the chicken in a bowl and add all the marinade ingredients. Mix well. Set aside until ready to stir-fry. To make the stir-fry sauce, mix the ingredients in a small bowl. They’re also called ‘wonton noodles’. Chinese Shaoxing Wine is a type of Chinese cooking wine made from rice.
