Use the leftovers of a roasted chicken dinner (after removing the meat) to make this easy chicken broth.

2 roast chicken carcasses, meat removed
1 onion, quartered
1 carrot, quartered
1 stalk celery, quartered
6 cloves garlic, unpeeled
1 gallon water
Several sprigs fresh parsley and thyme
1 teaspoon black peppercorns
1 teaspoon salt

Steps:

  • Place carcasses in a large pot. Add onion, carrot, celery, garlic and water. Bring to a boil, skimming foam. Reduce heat to low and add herbs, peppercorns and salt; simmer gently, uncovered, for 2 hours. Strain through a fine sieve into a large bowl. (Discard solids.) Let cool slightly, then refrigerate until cold. Skim off fat.

Number Of Ingredients 9

3 pounds bony chicken parts, such as backbones and wings
5 cups cold water
1 cup coarsely chopped onions
1 cup coarsely chopped celery
Salt to taste if desired
Freshly ground pepper to taste
1 bay leaf
1/4 teaspoon dried thyme
6 sprigs fresh parsley

Steps:

  • Pull off and discard most of the fatty portions of the chicken parts.
  • Combine all the ingredients in a large saucepan or small kettle. Bring to a boil and let simmer 20 minutes. Strain. Skim off and discard the surface fat.

    1. Put your chicken, carrot, celery and bacon in a large saucepan, cover with water and bring to the boil. Turn the heat down and simmer slowly for an hour and a quarter, skimming the white residue off the top every now and again. Add your rosemary sprigs, shitake mushrooms and sherry (if you are using it) for the last 10 minutes, then remove the chicken from the pan. It should be perfectly cooked, and will be great for salads or sandwiches or for tearing into slivers to put into the soup. Season the soup with salt and ladle it through a sieve into bowls, trying not to disrupt it too much as you want to keep it reasonably clear. Add the chicken slivers and a few mushrooms to each bowl and drizzle with a little extra virgin olive oil. The finished thing should be a kinda clear consommé.

Chop chicken; set aside for soup or save for another use. , Strain broth through a cheesecloth-lined colander, discarding vegetables and bay leaf. If using immediately, skim fat. Or, refrigerate 8 hours or overnight; remove fat from surface. Broth can be covered and refrigerated up to 3 days or frozen 4 to 6 months.
