Beer Cooked Chicken Recipe | Allrecipes image

A quick and unique taste, especially for those beer lovers. Chicken breasts marinated in beer, then sauteed with butter, beer and mushrooms! Best served with hot cooked pasta.

1 (12 fluid ounce) can or bottle beer
4 skinless, boneless chicken breast halves
2 tablespoons butter
1 cup sliced fresh mushrooms
1 tablespoon grated Parmesan cheese

Steps:

  • To Marinate: Pour 1/2 of the beer into a nonporous glass dish or bowl. Add chicken breasts, toss to coat, cover dish and refrigerate for 30 minutes to marinate.
  • Melt 1 tablespoon of the butter in a large skillet over medium heat. Add mushrooms and saute for 5 to 10 minutes or until cooked; remove from skillet and reserve, keeping warm.
  • Melt remaining 1 tablespoon butter in skillet over medium high heat and add chicken. Saute 5 to 6 minutes each side or until cooked through and juices run clear. Reduce heat to low, pour remaining beer over chicken and add reserved mushrooms. Cover skillet and let simmer for 5 to 10 minutes. Sprinkle with cheese and serve.

This is a great recipe if you are entertaining. It was given to me by my great friend in the UK - Mark aka MGB. It is a really rich dish and the presentation is fantastic. Everyone loves it, and is amazed that there is no stock in the sauce.

Number Of Ingredients 11

1 (3 lb) chicken, quartered
4 ounces butter
oil
4 shallots, finely chopped
7 ounces mushrooms, sliced
12 ounces lager beer (not Budweiser!) or 12 ounces premium beer (not Budweiser!)
1 ounce gin
salt and pepper
10 ounces single cream
2 tablespoons Guinness stout
fresh parsley (finely chopped)

Steps:

  • Sauté the chicken pieces in 2 oz of butter and a little oil.
  • Add the shallots and the mushrooms and continue to cook.
  • When they are well browned, pour over the beer and the gin, season with salt and pepper and simmer on a gentle heat for about an hour, or until the chicken is tender.
  • Shortly before serving, arrange the chicken pieces in separate a deep dish and keep hot.
  • On a high heat, reduce the sauce by about half, then add the cream to thicken sauce, with the rest of the butter, whisking all the while.
  • Whisk in the Guinness (it really makes a lot of difference), then pour back over the chicken and sprinkle the parsley.
  • Serve with fresh pasta (I use shells, as they hold the sauce).

    1. Preheat the barbecue, or oven to 200°C/400°F/gas 6. Take your chicken out of the fridge while you make the rub.
    2. In a pestle and mortar, bash up the fennel and cumin seeds and mix with the paprika, brown sugar, chilli powder, and a pinch of sea salt and black pepper.
    3. Stir in 3 tablespoons of oil until you get a paste, then drizzle all over the chicken, inside and out, using your hands to make sure you get it into all the nooks and crannies.
    4. Crack open the beer, have a couple of good swigs so your can is just about half full, then lower the chicken’s cavity on to the top of the can so it looks as though the chicken is sitting on the can.
    5. If you’re using the barbecue, try to strategically move a small amount of coals to the sides rather than directly underneath the chicken, so the heat radiates around it and cooks it from all angles rather than grills it.
    6. Carefully sit the chicken on the bars of the barbecue or in a roasting tray on the very bottom of the oven. Cook for 1 hour 10 minutes to 1 hour 30 minutes, or until the meat pulls away from the bone and the juices run clear. If this isn’t the case (all barbecues and ovens are slightly different) just cook for a bit longer.
    7. Once done, carefully remove the can and loosely cover the chicken with foil and a tea towel while you get some grilled veg, salad or warm breads together – but trust me, it tastes so good you won’t need much else.
