Steps:
- In a blender, pour in all the ingredients.
- Add ice cubes. You can also swap out a couple of ice cubes with frozen pineapple chunks to enhance the flavor. Blend until smooth.
- Pour mixture into a Poco Grande glass.
- Garnish with a pineapple wedge and cherry. You can also put a tiny umbrella to add fancy effects.

The ratios below were featured in The 12 Bottle Bar book - it's fairly heavy on the cream of coconut (or as they refer to is as coconut milk syrup) compared to other recipes which call for half the cream of coconut and up to double the pineapple juice.
