Better make plenty - these disappear fast. The unbaked dough may be frozen. The baked cookies may also be frozen.

Yield 2 1/2 dozen

½ cup butter, softened
1 (3 ounce) package cream cheese
1 cup sifted all-purpose flour
1 cup fruit preserves
? cup white sugar
1 teaspoon ground cinnamon

Steps:

  • DAY BEFORE: Cream butter and cream cheese together until smoothly blended. Beat in the flour. Shape dough into a smooth ball, wrap in foil or cling wrap, and refrigerate overnight or up to a week.
  • AT BAKING TIME: Remove dough from refrigerator 30 minutes before using. Start heating oven to 375 degrees F (190 degrees C).
  • Roll chilled dough thin. Cut with 3 or 4 inch round cookie cutter. Place small spoonful of jam in center of each round, moisten edges with water.
  • Fold round over and press edges together. Bake on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar mixed with cinnamon (traditional) OR in confectioners' sugar if preferred.

1/2 cup margarine, softened
1 (3 ounce) package cream cheese, softened
1 cup flour, sifted
1/8 teaspoon salt
1 (22 ounce) can apple pie filling
1 egg white
1 tablespoon cinnamon
1/2 cup sugar

Steps:

  • Cream margarine and cream cheese in bowl.
  • Blend in flour and salt.
  • Chill for 2 hours to overnight.
  • Roll dough on floured surface. Cut with biscuit cutter.
  • Spoon apple filling; seal edges with fork.
  • Place on baking sheet.
  • Mix egg white and 1 T. water. Brush over empanadas.
  • Sprinkle with mixture of cinnamon and sugar.
  • Bake at 350 degrees for 15 minutes.

  • Heat the oven to 220C/fan 200C/gas 7. Roll out the pastry on a lightly floured worksurface to a ½mm thickness. Stamp out 12 x 10cm circles using a biscuit cutter or glass. Spoon 1 tbsp of the filling into the middle of each circle, then brush the exposed pastry edges with beaten egg and fold over to create semi-circles. Use a fork to seal the pastry. Transfer the empanadas to baking trays lined with baking paper and brush with more beaten egg, then bake for 12-14 minutes or until golden brown. Leave to cool slightly, then serve warm or cold.

  • Preheat the oven to 400°. Heat a large nonstick skillet over medium-high heat and add sausage and oil. Cook, breaking up the sausage with a wooden spoon into small bits, until sausage is cooked through and golden, about 3 minutes. Add the eggs to the skillet, and cook, stirring slowly, until eggs are just barely set, about 1 minute. Remove the pan from the heat and let cool slightly while preparing the dough. Unroll one piece of the pie dough. Using a 4-inch round cutter, cut out 5 dough rounds. Repeat with second pie dough, then re-roll scraps from both to make 2 more rounds for 12 rounds total.  Working with one round at a time, use a pastry brush or your fingers to gently brush the edge with the beaten egg.
