Steps:

  • In a large bowl using an electric hand mixer, whip heavy cream until soft peaks form. Add softened cream cheese and sugar and stir until completely combined and no clumps remain. Fold in birthday cake mix. Pour mixture into prepared pie crust, smoothing over top with a rubber spatula. Top with sprinkles, cover with plastic wrap, and refrigerate until firm, at least 6 hours.

1 box birthday cake mix, with additional ingredients according to box instructions
32 oz cream cheese, softened
1 cup sugar
1 tablespoon vanilla extract
1 cup milk
1 tablespoon gelatin powder
whipped cream, to taste
sprinkles, to taste

Steps:

  • Preheat oven to 350°F (180°C).
  • Prepare cake mix according to the box directions and pour batter into a greased springform pan.
  • Bake for 35 minutes, or until a toothpick will comes out dry when inserted.
  • In a large mixing bowl, add the softened cream cheese, sugar, and vanilla, and mix until combined.
  • Microwave the milk for 90 seconds, then whisk in the gelatin powder.
  • Pour the gelatin mixture into the cream cheese mixture and whisk until combined.
  • Pour the cheesecake mixture over the cooled birthday cake and chill in the refrigerator for at least 3 hours.
  • Pipe whipped cream along the edge of the cake, then follow with sprinkles all over the top.
  • Enjoy!

Bake until a toothpick inserted into the middle of the cake comes out clean, 23 to 25 minutes. Let cake cool for 10 minutes. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then stir in sour cream and vanilla and fold in sprinkles. Pour cream cheese batter onto cooled cake and bake until cheesecake is slightly jiggly in the center, 1 hour to 1 hour 10 minutes. (Cheesecakes tend to crack if you don't use a water bath. If you don't want to use one, bake as directed. If you do want to use a water bath, double wrap the outside of the pan in aluminum foil and place in a baking dish.
