A fortunate mistake in forgetting to marinate the chicken in additional ingredients made me come up with this last-minute preparation. It's chanterelle season in Oregon, and I love to use this wild mushroom as often as I can in the fall.

Yield 2 chicken breast halves

Number Of Ingredients 10

3 tablespoons all-purpose flour
½ teaspoon paprika
2 skinless, boneless chicken breast halves
2 tablespoons butter
½ pound sliced chanterelle mushrooms
4 tablespoons butter
salt and ground black pepper, or to taste
1 cup chicken broth
½ cup dry Marsala wine
1 teaspoon dried tarragon, crushed

Steps:

  • Stir flour and paprika together in a shallow dish. Remove and set aside 1 tablespoon of the flour mixture for later use. Dredge the chicken in the flour mixture to coat evenly.
  • Melt 2 tablespoons butter in a skillet over medium heat; cook and stir chanterelle mushrooms in melted butter until they release their liquid and begin to brown, about 5 minutes. Transfer mushrooms to a bowl and set aside.
  • Melt 4 tablespoons butter in the skillet. Cook the chicken breasts in the melted butter until browned, about 3 minutes per side; season with salt and pepper.
  • Return the cooked mushrooms to the skillet and stir in chicken broth, reserved 1 tablespoon of flour-paprika mixture, Marsala wine, and dried tarragon. Place a cover on the skillet, reduce heat to low, and cook until the sauce is thick, the chicken is no longer pink in the center, and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

Wild Mushroom Conserve Recipe - Forager Chef image

Probably the greatest wild mushroom pickle/preserve you will ever taste. Yield: 1 qt canning jar

Number Of Ingredients 8

Scant 2 lbs small young mushroom buttons (chanterelles are my favorite )
3 cloves 7 grams garlic (thinly sliced )
1/2 cup flavorless oil for sauteeing (grapeseed or canola )
1 teaspoon 5 grams kosher salt (a generous teaspoon )
1/2 cup water
1/2 cup white wine or apple cider vinegar
2 teaspoons fresh chopped thyme (fresh only )
2 dried bay leaves (or use fresh )

Steps:

  • Read through the entire recipe before proceeding.
  • Clean your mushrooms by swishing them quickly in cold water while you clean them to ensure they'll have liquid to give up when they hit the heat. Transfer the mushrooms to a tray lined with a few paper towels and allow them to rest and release some liquid. I like to do this overnight in the fridge to allow them to dry out a bit.
  • In a wide pan with high sides, or a soup pot, gently heat the oil and the sliced garlic slowly on medium heat until the garlic begins to turn golden. Take your time here, as the more color you can put on the garlic, the better the finished product will taste. Do not burn the garlic.
  • When the garlic is perfectly golden, add the mushrooms, salt and herbs, stir so the salt can help draw out the mushroom liquid, then cover the pan, cooking on medium heat, and allow the mushrooms to give up their juice and halt the cooking of the garlic. The mushrooms should give off a good amount of water.
  • Once the mushrooms have wilted and given up their juice, add the water and vinegar, then bring the mixture to a boil.
  • Finally, put the mushrooms in a quart jar, pack them down, then bring the liquid back to a boil, and pour the boiling liquid over the mushrooms. Wiggle a chopstick around in the jar to get out air pockets.
  • Press the mushrooms down to make sure they are completely covered with liquid--add a little oil to cover if they threaten to pop up, then screw on the lid, then process the jar(s) in a water bath like regular cucumber pickles: 10 minutes for pints, 15 minutes for quarts . Store opened jars in the fridge.
