Mississippi Grilled Catfish

2 cups Hidden Valley® Original Ranch® Dressing
1 cup cheddar cheese
2 cups potato chips
4 catfish fillets

Steps:

  • Light grill using Kingsford® charcoal.
  • Mix dressing and cheese in medium bowl. Place potato chips in one quart Glad® Food Storage bag, seal and crush. Tear 4 5-inch individual sheets of aluminum foil and spray with nonstick cooking spray. Line up dressing mixture, chip bag and foil to make an assembly line. Dip catfish fillets in mixture until well coated and then place in potato chip bag. Once fish is coated with chips, place on aluminum foil sheet.
  • Grill catfish on covered grill over indirect heat for about 8 minutes or until it flakes easily with a fork.

1 tablespoon reduced-sodium soy sauce
1 teaspoon ground ginger
1 teaspoon sesame oil
4 (4-ounce) catfish fillets
¼ cup sliced green onions (about 2 large)
½ cup chopped red bell pepper (about 1/2 medium)
½ cup peeled, finely chopped cucumber (about 1/2 small)

Steps:

  • Preheat oven to 450°.
  • Combine soy sauce, ginger, and sesame oil, stirring well.
  • Cut 4 (12-inch) squares of aluminum foil; place a fish fillet in center of each square. Spoon green onions, bell pepper, and cucumber evenly over each fillet. Spoon soy sauce mixture evenly over vegetables. Fold foil over fillets to make packets, and seal edges tightly.
  • Place fish packets on a baking sheet; bake at 450° for 12 minutes.
