Making a homemade chocolate chip cookie in a skillet is easier, and arguably more delicious than baking them in the oven. You don’t have to scoop out individual cookies, and the cast iron gives the cookie a crisp crust with a soft, chewy center.

Yield 8 servings

Number Of Ingredients 10

1 (4 oz. or 100 g) bar semi-sweet chocolate
½ cup (125 mL) butter (1 stick), softened
½ cup (125 mL) packed brown sugar
¼ cup (60 mL) granulated sugar
¼ tsp (1 mL) salt
1 egg
1 tsp (5 mL) vanilla extract
1 cup (250 mL) all-purpose flour
½ tsp (2 mL) baking soda
Optional: Ice cream for serving

Steps:

  • Preheat the oven to 375°F (190°C). Coarsely chop the chocolate bar and set aside ¼ cup (60 mL) of the chocolate.Beat the butter, sugars, and salt together in a large bowl with an electric mixer.Add the egg and vanilla, then beat to combine.Add the flour and baking soda and beat until a smooth dough is formed. Mix all but the reserved chocolate from step 1 into the dough.Spread the dough onto the bottom of the 10" (25-cm) Cast Iron Skillet. Top with the reserved chocolate and bake for 25–28 minutes, or until the edges are dark brown and a toothpick inserted in the center comes out clean.Let the cookie cool in the pan for at least 5 minutes before cutting. Serve with ice cream, if desired.

Number Of Ingredients 11

¾ cup of shortening, melted
1 cup of sugar
¼ cup of molasses, unsulphured
1 of egg
2 cups of flour
2 teaspoons of baking soda
¼ teaspoon of cloves
¼ teaspoon of ginger
1 teaspoon of cinnamon
½ teaspoon of salt
of sugar for rolling

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • In a medium-size mixing bowl, stir together the flour, baking soda, spices, and salt. Set aside. 
  • In a large mixing bowl, combine the melted shortening, sugar, molasses, and egg. Whisk until well blended. Add the dry ingredients and combine.
  • Next, cover the dough with plastic wrap and chill for one hour.
  • Once dough is nicely chilled, use a tablespoon measuring spoon to scoop out the dough. Roll the dough into balls and then roll in sugar. 
  • Bake 9-11 minutes. Remove from oven and let cookies sit on baking pan for 3-5 minutes. Next, transfer cookies to wire rack to cool. 
  • For easy release of the molasses, spray the measuring cup with some non-stick spray before pouring in the molasses. It will just slip right out!
  • This recipe can easily be doubled, so you can make enough to be the champ of the cookie exchange.
