A fun appetizer that brings the flavor of a loaded baked potato to a couple of bites.

Number Of Ingredients 7

1 pound mini golden potatoes (or red) you get about 20 per bag
1/3 cup olive oil
Sea salt
1 cup cheddar cheese
1/4 cup cooked bacon, crumbled
1/2 cup sour cream
1/4 cup chopped green onion

Steps:

  • Boil potatoes whole for about 15 minutes or until fork tender.
  • Drain potatoes and place onto a greased (with olive oil) baking sheet.
  • Smash the potatoes down using either a potato masher or just the bottom of a cup.
  • Brush generously with olive oil.
  • Sprinkle generously with sea salt.
  • Bake at 450°F for 20 minutes until good and crispy.
  • Top each one with about a tbsp of cheese.
  • Place the pan under the broiler until the cheese starts to bubble.
  • Top with sour cream, bacon, and green onions (or chives).
  • Serve warm.

1 lb. baby potatoes
kosher salt
1/4 c. melted butter
3 cloves garlic, minced
Freshly ground black pepper
2 c. shredded Cheddar
10 slices bacon, cooked and crumbled
Sour cream, for serving, if desired

Steps:

  • Preheat oven to 400º. Place potatoes in a large pot and cover with two inches of water. Season with salt. Bring to a boil and boil until tender, 15 minutes. Drain until cool enough to handle. Transfer potatoes to a baking sheet. Pour over melted butter, garlic, and season with salt and pepper. Toss until totally combined. Using the bottom of a small glass or jar, smash potatoes into flat patties. Bake until crispy, 20 to 25 minutes more. Top with cheddar and bake until melted, 3 minutes more. Top with cooked bacon, green onions, and sour cream (if using) and serve.
