carp - 12.5 oz (350 g)
butter - 1/5 cup (60 g), fresh
carrots - 3.5 oz (100 g)
celery - 2 oz (50 g) head + leaves
onions - 2 oz (50 g)
parsley roots - 2 oz (60 g)
potatoes - 9 oz (250 g)
tomatoes - 5.5 oz (150 g)
lovage
bay leaf
black pepper - peppercorns
lemons
salt

Steps:

  • Wash and clean the carp. Pour cold water over it, salt and boil 10-15 min., then take it out.
  • Strain the broth and bring it to a boil. Add the onion , chopped and sauteed beforehand, plus the carrots , celery and parsley roots.
  • After 10 min. add the diced potatoes, carp, peeled and finely chopped red tomatoes, celery leaves, black pepper, bay leaf and lovage .
  • Once the potatoes soften, remove the soup from the stove and sprinkle it with chopped parsley. Salt it to taste and serve with slices of lemon.

250 gram Crucian Carp Fillet
1 liter Fresh Cilantro
2 inch Fresh Ginger
3 tablespoon Corn Starch
1/2 teaspoon Ground Ginger
1/2 cup Water
to taste Salt
1/4 teaspoon Ground White Pepper
1 liter Water

Steps:

  • Slice the Crucian Carp Fillet (250 gram) into 1/2 inch strips.
  • Transfer the fish into a bowl. Add the Ground Ginger (1/2 teaspoon). Set aside.
  • In a bowl, add the Corn Starch (3 tablespoon), Water (1/2 cup) and some Salt (to taste).
  • Add the fish and massage it into the cornstarch mixture. Let it marinate for 10 minutes.
  • Roughly chop the Fresh Cilantro (1 liter).
  • Peel and slice the Fresh Ginger (2 inch) into thin strips.
  • In a pot, add Water (1 liter) and the sliced ginger. Bring to a boil.
  • Once the water is boiling, add the marinated fish. Let cook for 5 minutes, then add the chopped cilantro. You can add more cilantro if you wish. Taste and adjust Ground White Pepper (1/4 teaspoon).
  • Transfer to a bowl, and serve immediately.
