Lightly spiced caramel apple cookies, reminiscent of a crisp Autumn afternoon. Perfect with a steaming cup of apple cider!

3/4 cup shortening
1 cup brown sugar, packed
1/2 cup white sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon ground cinnamon
3 cups rolled oats
1 (4 1/2 ounce) package dried apples, chopped into small pieces
1 (11 ounce) bag caramels, chopped (Kraft Premium Caramel Bits were used)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Stir in the rolled oats. Finally, stir in dried apple and caramel bits.
  • Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
1/4 cup all-purpose flour
3/4 cup chopped peeled apple (1 medium)
1/2 teaspoon apple pie spice
24 caramels, unwrapped (from 14-oz bag)
2 tablespoons half-and-half
3 tablespoons chopped pecans

Steps:

  • Heat oven to 350°F. In large bowl, break up cookie dough. Stir or knead in flour, apple and apple pie spice until well blended. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.) Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake 14 to 16 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 20 minutes.
  • Meanwhile, in small microwavable bowl, microwave caramels and half-and-half uncovered on High 30 to 60 seconds, stirring once, until caramels are melted. Drizzle over tops of cookies; sprinkle with pecans. Store covered in refrigerator.
