Raw Pack canned corn - adapted from the Ball Blue Book. A great tip I heard here on Zaar is to use an angel food cake pan when cutting the kernels off the cob. Just place the cop on the center point of the pan and cut around the cob...all the kernels fall into the pan beautifully with no mess!

Prep Time 20 minutes

Cook Time 1 hours 25 minutes

Yield 1 pint

Number Of Ingredients 3

3 -6 ears of corn, per quart
1/2 teaspoon pickling salt
water

Steps:

  • Husk corn, remove silk and wash.
  • Cut kernels from cob. Pack loosely into hot jars, leaving 1 inch headspace. Do not shake or press down.
  • Add 1/2 teaspoon salt to each pint jar, 1 teaspoon salt to each quart jar, if desired.
  • Ladle boiling water over corn leaving 1 inch headspace.
  • Remove air bubbles and apply lids.
  • Process pints 55 minutes, quarts 1 hour and 25 minutes at 10 pounds pressure in a pressure canner.

Frozen Canned Fresh Corn Recipe - Food.com image

When the corn crop is good, I make sure to can as much of it as I can. I'm spoiled, because this is the only "canned" corn I will eat. If you can't have the fresh stuff, this serves as a close second. I freeze it in quart sized freezer bags and stock pile it in the deep freeze. This way, I get fresh corn all year long.

Cook Time 10 minutes

Yield 4 quarts

Number Of Ingredients 4

4 quarts fresh corn, cut off the cob
1 quart water
4 teaspoons salt
1 cup sugar

Steps:

  • Cut fresh corn of the cob.
  • Combine in a big stock pot with remaining ingredients.
  • Bring corn to a boil and cook for 10 minutes, stirring occasionally.
  • Remove from heat and let corn cool.
  • Fill quart size freezer bags and freeze flat using a cookie sheet.
