We like grilling because it's a no-fuss way to make a meal. This pleasing potato recipe is one we use often! The onion, cheddar cheese and Worscestershire sauce combine to make a super side dish for any grilled meat. Plus, cooking in the foil makes cleanup a breeze. —JoAnn Dettbarn, Brainerd, Minnesota

5 medium potatoes, peeled and thinly sliced
1 medium onion, sliced
6 tablespoons butter
1/3 cup shredded cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/3 cup chicken broth

Steps:

  • Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, Worcestershire sauce, salt and pepper; sprinkle over potatoes. , Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.

These cheesy grilled potatoes are so good, I could eat them without anything else to go with them!

Number Of Ingredients 8

5 potatoes, thinly sliced
1 onion, sliced
6 tablespoons butter, cut into pieces
? cup shredded Cheddar cheese
2 tablespoons minced fresh parsley
1 tablespoon Worcestershire sauce
salt and pepper to taste
? cup chicken broth

Steps:

  • Preheat an outdoor grill for high heat.
  • On a piece of heavy foil approximately 20x20 inches, place the potatoes and onion. Dot with butter.
  • In a medium bowl, mix Cheddar cheese, parsley, Worcestershire sauce, salt and pepper. Sprinkle the mixture over the potatoes.
  • Fold edges of foil. Cover potatoes with chicken broth.
  • Seal foil tightly and place on the prepared grill. Cook 35 to 40 minutes, or until potatoes are tender.

  • Preheat grill to medium-high, or preheat the oven to 425º. Cut 4 large pieces of foil about 10" long. In a large bowl, toss potatoes with olive oil, garlic powder, and oregano and season with salt and pepper. Divide potatoes between foil pieces, then fold the foil packets crosswise to completely cover the potatoes. Roll the top and bottom edges to seal them closed. Place foil packets on the grill and cook until just cooked through, 10 to 15 minutes. (Or transfer to the oven and bake about 15 minutes.) Unwrap the foil packets and sprinkle mozzarella and Parmesan on top of the potatoes. Fold foil back over the potatoes and cook until cheese is melty, about 3 to 5 minutes. Top with parsley and red pepper flakes and serve warm.
