2 -3 tablespoons sunflower oil
1 onion, sliced (or chopped)
1 green bell pepper, seeded and sliced (or chopped)
1 small head white cabbage, sliced (or chopped)
12 ounces canned tomatoes, undrained
1 tablespoon mild curry powder
salt
pepper
water, if needed

Steps:

  • Heat the oil in a large skillet.
  • Add onion and pepper, and saute until softened and onion is translucent.
  • Add cabbage, tomatoes, curry powder, tomatoes with juice, salt and pepper.
  • Cook for about 30 minutes, stirring occasionally.
  • Add a little water if mixture sticks to pan.

South African cabbage curry is lightly spiced yet piquant from the use of dry chillies. It is best served with soft roti, rice or phutu.

half a head of cabbage
2 medium potatoes (cut into quarters)
1 medium onion
4 tablespoons vegetable oil
desired limit dry chillies (I used 3 birds eye chillies)
salt
half a cup of water

Steps:

  • Prepare the vegetables, wash and slice the cabbage and onions fine.
  • Heat a pot on medium heat.
  • Add oil. Add onions. Fry until soft and slightly brown.
  • Add dry chillies.
  • Add potatoes.
  • Add cabbage.
  • Pour water over cabbage.
  • Cover and allow to cook for 20 minutes on medium to low heat.
  • Remove the pot lid and allow to dry. Cabbage should be slightly brown and potatoes are soft.
  • Serve warm.

  • Cook the cabbage leaves until soft and drain. Soak the bread in water until soft, squeeze out excess liquid and mix the breadcrumbs with the mince. Add the onion, celery, parsley, garlic, salt and pepper and mix well. Shape 8 large meatballs. Roll the remaining meat mixture into small meatballs. Wrap each large meatball in a cabbage leaf and secure with a clove. Heat the oil in a saucepan and fry the onion until golden brown. Add the tomato and stir-fry gently. Put the cabbage meatballs and the small meatballs in the saucepan, cover and simmer over medium heat for 30 minutes or until done. Serve the meatballs with rice and beetroot salad.
