The savory topping of pomodorini, or marinated sun-dried tomatoes, is paired with a fresh, soft cow's-milk cheese called Stracchino, which is also known as Crescenza.

Yield Makes 1 cup pomodorini (enough for 8 slices of bread)

Number Of Ingredients 8

10 sun-dried tomatoes
1/2 teaspoon sherry vinegar
1 tablespoon fresh oregano leaves
2 teaspoons salted small capers, rinsed
1 peeled, grated whole medium garlic clove
1/3 cup extra-virgin olive oil
6 to 8 ounces Stracchino cheese
Toasted or grilled country bread

Steps:

  • Make the pomodorini: Soak sun-dried tomatoes in warm water for 1 hour. Drain, and cut into 1/2-inch pieces. Mix tomatoes with sherry vinegar, oregano, capers, garlic, and olive oil. Let stand for 30 minutes.
  • Make the tartines: Spread a generous amount of Stracchino cheese on bread, and top with pomodorini.

2 x 250g/9oz bavette or flank steak
1 tbsp sunflower oil
2 tbsp soy sauce
2 tbsp olive oil
2-3 garlic cloves
thumb-sized piece ginger , grated
juice ½ lemon , reserve lemon half
1 tbsp balsamic vinegar
1 tbsp honey
1 rosemary sprig, bruised

Steps:

  • For the marinade, mix all the ingredients together in a bowl. Place the steaks in a shallow dish, pour marinade over to coat the meat completely. Cover, chill and leave to marinate overnight.
  • Scrape the marinade off the steaks and rub each steak with a drop of sunflower oil. Heat a griddle pan until very hot, then rub the steaks with the reserved lemon half and cook with the rosemary sprig for 3-4 mins each side for medium-rare, 1 min longer if you prefer it cooked more. Rest for 5 mins before serving with mash or chips.
