My great grandma's recipe (duh). The combination of confectioners' sugar and cake flour makes them really melt in your mouth. Don't try to double unless you've got a really big mixer!

Number Of Ingredients 6

1 cup butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups cake flour
1 cup chopped pecans
½ cup confectioners' sugar for rolling

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together the butter, 1 cup confectioners' sugar and vanilla until smooth. Stir in the cake flour, then fold in the pecans. Roll dough into 1 inch balls and place them 1 inch apart onto ungreased cookie sheets.
  • Bake for 15 to 19 minutes in the preheated oven, until lightly browned. Cool cookies completely before rolling in additional confectioners' sugar. If you are storing the cookies in a tin, add remaining sugar to the tin.

1 stick butter
¾ cup confectioners' sugar
1 egg
1 tsp vanilla extract
1 tsp almond extract
1½ cup all-purpose flour
2 tsp baking powder
1 pinch salt
¼ cup confectioners' sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Beat together the butter and ¾ cup confectioners' sugar with an electric mixer in a large bowl until smooth. Add the egg, vanilla extract, and almond extract.
  • Stir together the flour, baking powder, and salt in a bowl and mix into the butter mixture until just incorporated.
  • Shape the dough into 1-inch balls and arrange on the prepared baking sheet spaced about 2 inches apart.
  • Bake in the preheated oven until firm. This takes about 10 minutes. Cool on the sheet for 10 minutes before removing to cool completely on a wire rack.
  • Spread the ¼ cup confectioners sugar on a plate; roll the cooled cookies in the confectioners' sugar to coat.
