1 orange, zest and juice
2 cloves garlic, minced
1 tablespoon liquid honey
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce or barbecue-type sauce
2 skinless boneless chicken breasts

Steps:

  • 1 A marinade is a mixture used to add flavour to, often, meat. In a glass bowl place orange zest (the orange part of the skin) and juice, garlic, honey, Worcestershire sauce and hot or barbecue sauce. Mix together.
  • 3 Slice each chicken breast in 6 strips and marinate (that means soak) in the prepared mariande for 45 minutes.
  • 4 Heat a non-stick pan and cook chicken, turning frequently, until browned all over.
  • 5 Pour in remaining marinade and continue to cook, turning the chicken in the sauce until dark golden and sticky.

Pancakes with smoked salmon - Healthy Food Guide image

Perfect for a lazy weekend brunch, these smoked salmon-topped pancakes are sure to impress.

Number Of Ingredients 10

2 medium eggs, separated
¾ cup skim milk
1 cup self-raising flour
sunflower oil spray
½ cup low-fat crème fraîche
3 tablespoons creamed horseradish
squeeze of lemon juice
250g smoked salmon, torn
small bunch fresh chives, snipped, to garnish

Steps:

  • 1 Whisk the egg whites until they’re thick and hold soft peaks.
  • 2 In a separate bowl, mix the milk with 2 tablespoons water and whisk together with the flour and egg yolks until smooth. Gently whisk in the egg whites.
  • 3 Heat a 20cm frying pan over a medium heat, spray with a little sunflower spray and add batter to the pan in 2tbsp dollops – you should be able to fit three pancakes into the pan at a time, spacing them a few centimetres apart. Cook for 1–1½ min, until the surface is bubbly and the underside is golden. Turn over and cook for up to 1 further min, until golden. Transfer to a plate, cover with a thick tea towel to keep warm, then repeat with the remaining mixture, to make 18 pancakes.
  • 4 Combine the crème fraîche, horseradish and lemon juice in a small bowl.

Since I was planning to make a lemon meringue pie (recipe to follow later this week), I pre-baked the crust. Heat the oven to 425 degrees F. Be sure the crust is evenly pressed into the pie pan. Now prick it all over with a fork. This is called “docking the dough”. It helps keep the dough from buckling and baking unevenly. Next, take the buttered piece of foil and place it over the dough, butter side down. Pour one pound of dried uncooked peas or beans over the foil to act as weights during the pre-baking. Notice in the photo how the foil covers the pie rim well as well during the initial phase of pre-baking to avoid burning the rim. Bake for 12 minutes; remove the weights and the foil. Now reduce the oven temperature to 350 degrees F and continue baking until the crust starts to develop a golden color, about 10 more minutes or so. The crust is now partially baked and ready for any filling you plan to bake.
