1 head iceberg lettuce, chopped
1 ounce pepperoni, diced
1 ounce mortadella, diced
1 ounce red onion, diced
2 ounces roma tomatoes, diced
2 ounces cucumbers, diced
1 ounce gorgonzola, crumbled
1 ounce feta cheese, crumbled
1/2 ounce pepperoncini pepper, chopped
1/2 teaspoon oregano
4 ounces Italian vinaigrette dressing
3 pepperoncini peppers, whole
black olives
green olives

Steps:

  • Place all ingredients in a mixing bowl, except 1/2 the tomatoes, the whole pepperoncini, olives and dressing and toss.
  • Add the dressing and toss until fully incorporated.
  • Mound the salad mixture on a chilled plate, getting as much height as possible.
  • Place remaining tomates around the outside of the salad.
  • Garnish with whole pepperoncini and olives and serve!

I loved the cooking classes that they used to have. I hope they start them up again.. This is from their cook-book I bought. Serve with Buca di Beppo Meatball Sauce !!! Yum

Yield 40 meatballs, 4-6 serving(s)

Number Of Ingredients 15

2 1/2 lbs ground beef
1/2 cup romano cheese, grated
3/4 cup dry Italian seasoned breadcrumbs
4 large eggs
2 teaspoons salt
1/4 cup fresh garlic, chopped
6 garlic, gloves sliced thin
1 large Spanish onion, diced into 1/4 in pieces
1 celery, chopped
1 carrot, chopped
1/4 cup olive oil, plus
2 tablespoons olive oil
1/4 cup fresh Italian parsley, chopped
2 (28 ounce) cans plum tomatoes with juice
salt and pepper

Steps:

  • Meatballs:.
  • In a large bowl mix all ingredients together.
  • Shape into meatballs the size of a golf ball ( makes about 40 meatballs).
  • Set aside and let rest for 1 hour.
  • Cook the meatballs in the Meatball Sauce :.
  • In a large pan saute in olive oil, garlic,onion,celery and carrot until translucent.
  • Add parsley.
  • Break the tomatoes with your hands and add with juice to the pan.
  • Add salt and pepper.
  • Bring to boil then lower heat to simmer and add your meatballs.
  • Simmer for about 45 minutes.
  • Remove meatballs to platter and serve sauce with your favorite pasta !

This is one of those dishes that keeps you going back to a restaurant time and time again. It used to only be on Buca Di Beppo's menu once in awhile, but I'd always ask for it, whenever I went there for dinner. I guess they got tired of me asking about it all the time, because they gave me the recipe. It's so delicious, and a lot easier to make, then you'd think. They finally put it in the menu permanently, but it's nice to be able to make it at home, so you can have it anytime you want (and at a fraction of the price,too!) It's definitely one of my favorite foods to eat -anywhere-!
