You can find sweet and savory oyster sauce in Asian markets.

3 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon cornstarch
Pinch of sugar
1 tablespoon vegetable oil
2 garlic cloves, smashed and peeled
1 head broccoli (1 1/2 pounds), cut into long florets

Steps:

  • In a small bowl, whisk together oyster sauce, soy sauce, cornstarch, sugar, and 1 tablespoon water.
  • In a large skillet, heat vegetable oil over medium-high. Addgarlic and broccoli. Cook, tossing occasionally,until broccoli is bright green, about 3minutes. Add 1/2 cup water, cover, andcook until broccoli is tender but stillhas some bite, about 2 1/2 minutes. Addoyster sauce mixture; cook until thickened,about 1 minute.

This also works well with Chinese broccoli. I have never made it with regular broccoli or other greens, but it would probably work just as well with them too.

8 ounces Broccolini (also called asparation or baby broccoli)
1 -1 1/2 tablespoon peanut oil
1 tablespoon oyster sauce

Steps:

  • Wash, dry, and cut broccolini into thirds.
  • Heat oil over high in a wok or similar type pan.
  • Stir fry the stems first for about 3-4 minutes. You may need to turn the heat down to medium high.
  • Add the top leaf portion, and cook for another 3-4 minutes.
  • Shut off heat and add oyster sauce, stirring to coat. Serve.

  • Separate the broccoli florets from the stems. Pare the stems with a paring knife or vegetable peeler and cut them into 1/4-inch slices on the diagonal. Separate the floret clusters into smaller florets (1 inch wide) and halve them lengthwise if large. The pieces need to be small to cook quickly, but not so small that they risk getting overcooked. In a small bowl, stir together the stock and cornstarch until the cornstarch dissolves. Add the oyster sauce and toasted sesame oil and stir to blend. Heat a large wok (or high-sided skillet) over high heat. When the skillet is hot, add the peanut oil and swirl to coat. When the oil is hot, add the garlic, ginger, and chile (if using) and stir-fry for 15 seconds to release the garlic's fragrance. Be careful not to let the garlic burn. Add the broccoli stems and florets and stir-fry until crisp-tender, about 3 min., adding water, 1 to 2 Tbs. at a time, if needed.
