4 tablespoon(s) unsalted butter
1 stick(s) unsalted butter
7 1/2 cup(s) cubed french bread
1 quart(s) buttermilk
1 cup(s) golden raisins
2 - eggs, lightly beaten
1 1/3 cup(s) brown sugar, firmly packed
2 teaspoon(s) pure vanilla extract
1 teaspoon(s) rum extract
1/2 cup(s) granulated sugar
1 - egg yolk
1/4 cup(s) water
3 tablespoon(s) rum

Steps:

  • Preheat the oven to 350 degrees. Place 4 T of the butter in a 13x9" baking dish and place in the oven to melt.
  • Meanwhile, combine the bread cubes, buttermilk and raisins in a large mixing bowl. In a separate bowl, whisk together the eggs, brown sugar, vanilla extract and rum extract. Pour over the bread mixture and stir gently to combine.
  • Transfer to the prepared pan nd pour over the melted butter. Bake 1 hour.
  • Meanwhile, combine the remaining butter, granulated sugar, egg yolk and water in a small saucepan. Stir well and place over medium heat. Stir constantly until the sugar dissolves and the sauce begins to thicken about 10 min. Add the rum. To serve, cut the warm bread pudding in squares, drizzle with the sauce and serve warm.

8 cups cubed day-old French bread, crusts removed
5 large eggs
3 cups buttermilk
1 can (15 ounces) cream of coconut
1 cup sweetened shredded coconut
1 cup pineapple preserves
1/2 cup sugar
1 teaspoon ground cinnamon
3/4 cup heavy whipping cream
1/2 cup sour cream
1/2 cup caramel ice cream topping
1 tablespoon rum or 1 teaspoon rum extract
Toasted sweetened shredded coconut, optional

Steps:

  • Place bread in a greased 13x9-in. baking dish. In a large bowl, combine the eggs, buttermilk, cream of coconut, coconut, preserves, sugar and cinnamon. Pour mixture over bread cubes. Let stand for 15 minutes or until bread is softened. Bake, uncovered, at 350° for 55-65 minutes or until a knife inserted in the center comes out clean., In a large bowl, beat the cream, sour cream, caramel topping and rum until soft peaks form. Serve with warm or cooled bread pudding. Sprinkle with toasted coconut if desired.
