Chinese Braised Mushrooms & Tofu Recipe | EatingWell image

Ma Po Tofu, a classic dish from the Sichuan province of China, inspired this recipe. The original is made with soft tofu and ground pork or beef with plenty of heat from dried chile peppers and Sichuan peppercorns. Portobello mushrooms stand in for the meat in our vegetarian version and convenient jarred chile-garlic sauce gives it plenty of kick. Serve with brown rice.

1 tablespoon canola oil
4 cloves garlic, minced
2 teaspoons minced fresh ginger
4 portobello mushroom caps, gills removed, chopped
1 tablespoon chile-garlic sauce, (see Note)
1 1/4 cups mushroom broth, or vegetable broth
2 tablespoons dry sherry, (see Tip)
2 tablespoons reduced-sodium soy sauce
2 teaspoons brown sugar
1 14-ounce package firm tofu, cut into 1/2-inch cubes
1 8-ounce can water chestnuts, rinsed and coarsely chopped
1 tablespoon water
1?½ teaspoons cornstarch

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and ginger and cook, stirring, until fragrant, about 30 seconds. Add mushrooms and chile-garlic sauce and cook, stirring occasionally, until most of the mushroom liquid has evaporated, 4 to 6 minutes.
  • Add broth, sherry, soy sauce, brown sugar, tofu and water chestnuts and bring to a simmer. Cook, stirring occasionally and adjusting the heat as necessary to maintain a simmer, for 10 minutes to blend flavors.
  • Combine water and cornstarch in a small bowl. Stir the mixture into the saucepan and simmer until the sauce is thickened, about 2 minutes.

800g firm tofu (cut into bite-sized)
½ cup fresh shiitake mushrooms
1 cup carrots (sliced, blanched)
10 spring onions (white part only, sliced)
1 cup broccoli florets (blanched)
½ tsp corn flour (mixed in 2 tbsp water)
1 tsp sesame oil
3 tbsp cooking oil
½ tsp chicken powder
1 tbsp oyster sauce
1 tbsp dark soy sauce
1 cup water

Steps:

  • To Prep Combine Braising Sauce ingredients and mix well. Set aside. To Cook Heat 2 tbsp cooking oil in wok on high and pan fry tofu until golden brown. Remove tofu from wok onto a bowl. Set aside. Add 1 tbsp cooking oil and heat on high. Fry white part of spring onions until fragrant. Add mushrooms and tofu, toss for 30 secs to mix well. Add braising sauce to the stir fry and bring it to a boil. Lower heat to medium and cover with lid, let it cook until braising liquid is reduced to half. Taste test and add seasoning if required. Add broccoli and carrots. Let it simmer for 30 secs or until vegetables are tender. Stir in corn flour mixture gradually until desired thickness. Serve.

  • Soak the Chinese black mushrooms in 1 1/2 c. warm water for 20 min. Drain and reserve soaking liquid. Throw away stems and cut caps in half or possibly in thirds if very large. Reserve. Remove stems from shiitake mushrooms and cut caps in half. Reserve. Wrap the tofu in paper towels or possibly a cotton towel and place a heavy weight such as a skillet, on top. Let stand for 30 min to press out the excess water, then cut into 1/2-inch cubes. Combine the Braising mix ingredients and set aside. Combine the cornstarch and water and blend well. Heat a flameproof casserole or possibly a Dutch oven, add in the corn oil, and heat till warm. Add in the leek, garlic, and softened black mushrooms and stir-fry for about 10 seconds, till fragrant. Add in the braising mix and heat back to the boil. Reduce the heat to medium low, cover, and simmer for 20 min. Uncover, increase the heat to medium, and cook till the sauce is reduced by half. Add in the cornstarch thickener and cook, stirring continuously to prevent lumps, till thickened. Transfer to a serving bowl or possibly serve directly from the pot. Serves. 6. NOTE: "In this dish, smoky mushrooms and chicken broth flavor tofu cubes and provide a rich base for the sumptuous sauce. Served with bowls of steaming rice, this dish makes a delicious and filling meal."
