2 eggs
1/4 cup sugar
1 1/2 tablespoons all-purpose flour
1/8 teaspoon salt
2 cups milk, scalded
1/2 teaspoon vanilla extract

Steps:

  • Beat eggs in top of a double boiler on medium speed of an electric mixer until frothy.
  • Combine sugar, flour, and salt; stirring well; gradually add to eggs, beating until thick.
  • Gradually stir about one-fourth of hot milk into egg mixture; add remaining milk, stirring constantly.
  • Bring water in bottom of double boiler to a boil.
  • Reduce heat to low; cook, stirring occasionally, 20 minutes, or until custard thickens and coats a metal spoon.
  • Stir in vanilla.
  • Pour custard into serving bowl and chill.

Steps:

  • Combine milk and whipping cream in a medium saucepan. Cook over low heat until mil k is warm. Combine eggs and sugar, beating well. Gradually stir one-fourth of warm milk mixture into eggs; add to remaining hot mixture, stirring constantly.
  • Cook over low heat, stirring constantly until mixture thickens and coats the spoon. Remove from heat; stir in vanilla. Cool to room temperature; chill.
