2- Minute Low Carb English Muffin - Sugar-Free Mom image

2 tbsp cashew butter (unsweetened, almond butter or peanut butter)
1 tbsp butter
2 tbsp almond flour (I used Bob's Red Mill)
1/8 tsp salt
1/2 tsp baking powder
1 tbsp unsweetened almond milk
1 egg (beaten)

Steps:

  • Spray the 2 ramekins you are using with olive oil cooking spray or coconut oil spray.
  • Add the almond butter and butter to the dish.
  • Microwave for 30 seconds and mix until smooth. Set aside to cool.
  • In a small bowl whisk the almond flour, salt and baking powder together.
  • Pour the milk and egg to dry ingredients and stir until combined.
  • Pour this mixture evenly into the two greased ramekins with the almond butter mixture and stir to combine well.
  • Microwave 1-2 minutes or until toothpick in center comes out clean.
  • Allow to cool a few minutes before taking it out of the ramekin and slicing in half to toast.
  • Toast until desired.
  • Enjoy!

1/2 cup pumpkin puree
2 tablespoons avocado oil
1/4 cup granulated sugar-free sweetener (we used Lakanto or Swerve)
2 eggs, room temperature
1 teaspoon gluten-free vanilla
1 1/4 cups almond flour - make sure to spoon the almond flour into the measuring cup, then level it.
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat oven to 350°F (180°C). Grease an 8″X8″ baking pan; set aside.
  • Add pumpkin, oil, sweetener, eggs, and vanilla to a medium mixing bowl. Mix until combined.
  • Add almond flour, pumpkin spice, salt, and baking soda. Mix until well combined.
  • Pour batter into your prepared 8"X8" pan.
  • Bake for 25 - 30 minutes or until the top starts to darken and the center is set (always start with the lowest time).
  • If desired, frost with keto cream cheese frosting.
  • Store in an airtight container in the refrigerator for up to 5 days.
