PEANUT BUTTER BLUEBERRY ENERGY BALLS RECIPE | EATINGWELL

Peanut Butter Blueberry Energy Balls Recipe | EatingWell image

These healthy energy balls made with peanut butter, chocolate and dehydrated blueberries deliver a mixture of simple and complex carbohydrates to help fuel you up whenever you need a little boost. They're no-bake and easy to make with ingredients you probably have on hand, like oats and nut butter. Feel free to experiment with different mix-ins—for example, other dried fruit or chopped nuts—in place of the chocolate chips and blueberries.

BLUEBERRY-PECAN ENERGY BALLS RECIPE | EATINGWELL

Blueberry-Pecan Energy Balls Recipe | EatingWell image

Dried blueberries and pecans team up with cacao nibs for a chocolaty treat any time of day. The cacao is a bit more bitter than chocolate, but the maple syrup helps tame it. Almond butter and chia seeds provide protein to make these bites substantial snacks to fuel your body.

Provided by Katherine Martinelli

Categories     Healthy Blueberry Recipes

Total Time 25 minutes

Number Of Ingredients 7

1?½ cups dried blueberries
1?½ cups pecans
6 tablespoons cocoa nibs
6 tablespoons almond butter
3 tablespoons chia seeds
3 tablespoons pure maple syrup
Pinch of salt

Steps:

  • Combine blueberries, pecans, cacao nibs, almond butter, chia seeds, maple syrup and salt in a food processor. Pulse until finely chopped, 10 to 20 times, then process for about 1 minute, scraping down the sides as necessary, until the mixture is crumbly but can be pressed to form a cohesive ball.
  • With wet hands (to prevent the mixture from sticking to them), squeeze about 1 tablespoon of the mixture tightly between your hands and roll into a ball. Place in a storage container. Repeat with the remaining mixture.
