4 - rib eye steaks, 1 inch thick
4 teaspoon(s) blackened seasoning spice (https://www.justapinch.com/recipes/sauce-spread/seasoning-mix/blackened-seasoning-spice.html)
1/4 pound(s) butter (if using the skillet method)

Steps:

  • Rub the seasoning into the meat (if you like it spicy, add more).
  • Heat an outdoor grill or melt the butter in a heavy iron skillet. When the skillet is very hot, add the steaks and cook to the desired doneness.
  • Note: If you cook indoors, be sure to run your vent on high as the Blackened Seasoning tends to smoke a great deal.

3 tablespoons chili powder
2 teaspoons dried thyme
1 teaspoon cayenne pepper
½ teaspoon ground white pepper
½ teaspoon celery seeds
½ teaspoon garlic powder
¼ teaspoon onion powder
4 1 1/4-inch-thick boneless rib-eye steaks (about 12 ounces each)
¼ cup plus 2 tablespoons vegetable oil
Salt

Steps:

  • Preheat the grill to medium-high. In a bowl, combine the chili powder, thyme, cayenne, white pepper, celery seeds, garlic powder and onion powder. Rub the steaks with the oil, then season with salt and the spice mixture. Place on the grill, cover and cook for 5 minutes; turn, lower the heat to medium and grill 5 minutes more for medium-rare.

  • Spread spice mixture on plate. Coat both sides of steaks with spice mixture. Dip both sides of steaks into melted butter. Heat heavy large skillet over high heat until very hot. Add steaks and cook to desired doneness, about 2 minutes per side for medium-rare. Transfer to cutting board; let stand 2 minutes. Thinly slice steaks crosswise. Arrange slices atop salads. I took a rub recipe on here and tweaked it for a while until it it came out how I liked. My goal was to make a rub that I could generously apply to chicken, salmon, or steak that had great flavor and that was not too salty or spicy. This is our standby now and our favorite way to use is is to pat it on both sides of a salmon filet and then cook the salmon on the grill.
