Diabetic-Friendly Chocolate Chip Cookies | Allrecipes image

Chocolate chip cookies made with part wheat flour and part almond flour, sugar substitute, and stevia-sweetened chocolate chips. They are delicious and satisfying with low carbs and low sugar.

1 cup all-purpose flour
¾ cup paleo flour (such as Bob's Red Mill®)
½ cup packed sucralose and brown sugar blend (such as Splenda® Brown Sugar)
½ cup low-calorie natural sweetener (such as Swerve®)
½ teaspoon baking soda
¼ teaspoon salt
1 cup unsalted butter, at room temperature
2 large eggs
1 teaspoon vanilla extract
1 (12 ounce) bag dark chocolate chips
¾ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Combine both flours, both sugars, baking soda, and salt in a bowl.
  • Mix butter, eggs, and vanilla in a large bowl with an electric mixer until creamy. Mix in dry ingredients until well combined. Stir in chocolate chips and nuts. Drop teaspoonfuls of dough 2 inches apart onto the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 12 minutes, switching racks halfway through.
  • Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

1/2 cup unsweetened applesauce
1 1/2 cup old-fashioned oats
1 tablespoon sugar
1/2 teaspoon vanilla extract
1/2 cup fresh blueberries
2 tablespoon chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Coat a baking sheet with cooking spray.
  • In a large bowl, combine bananas, applesauce, oats, sugar, and vanilla; mix well. Stir in blueberries and walnuts.
  • Drop by heaping tablespoons onto baking sheet. Bake for 20-22 minutes, or until light golden-brown around edges. Let cool 5 minutes, then remove to a wire rack to finish cooling.
