Treacle tart is made with golden syrup, breadcrumbs and lemon to cut through the sweetness. Serve with crème fraiche.

250g/9oz plain flour
130g/4½oz butter, plus extra for greasing
400g/14oz golden syrup
150g/5½oz fine fresh white breadcrumbs
2 lemons, zest and juice
1 free-range egg, beaten, to use as egg wash

Steps:

  • First make the short crust pastry: measure the flour into a large bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs (alternatively, this can be done in a food processor). Add about three tablespoons of cold water and mix to a firm dough, wrap in cling film and chill in the fridge for about 20 minutes.
  • Preheat the oven to 200C/400F/Gas 6 and put a heavy baking tray in the oven to heat up. Grease a deep 18cm/7in loose-bottomed fluted flan tin with butter.
  • Remove about 150g/5½oz of pastry from the main ball and set aside for the lattice top.
  • Roll the rest of the pastry out thinly on a lightly floured work surface and line the prepared flan tin with the pastry.
  • Prick the base with a fork, to stop the base rising up during baking.
  • Place the reserved pastry for the lattice top on cling film and roll out thinly. Egg wash the pastry and set aside to chill in the fridge (the cling film makes it easier to move about). Do not cut into strips at this stage. Do not egg wash the strips once they are on the tart as it will drip into the treacle mixture.
  • To make the filling, heat the syrup gently in a large pan but do not boil.
  • Once melted, add the breadcrumbs, lemon juice and zest to the syrup. (You can add less lemon if you would prefer less citrus taste.) If the mixture looks runny, add a few more breadcrumbs.
  • Pour the syrup mixture into the lined tin and level the surface.
  • Remove the reserved pastry from the fridge and cut into long strips, 1cm/½in wide. Make sure they are all longer than the edges of the tart tin.
  • Egg wash the edge of the pastry in the tin, and start to make the woven laying lattice pattern over the mixture, leave the strips hanging over the edge of the tin.
  • Once the lattice is in place, use the tin edge to cut off the strips by pressing down with your hands, creating a neat finish.
  • Bake on the pre-heated baking tray in the hot oven for about 10 minutes until the pastry has started to colour, and then reduce the oven temperature to 180C/350F/Gas 4. If at this stage the lattice seems to be getting too dark brown, cover the tart with tin foil.
  • Bake for a further 25-30 minutes until the pastry is golden-brown and the filling set.
  • Remove the tart from the oven and leave to firm up in the tin. Serve warm or cold.

This classic Bakewell tart is topped with feathered icing to give an impressive finish. For this recipe you will need a 23cm/9in fluted flan tin, baking beans, piping bag fitted with small plain nozzle and a few cocktail sticks.

200g/7oz raspberries
250g/9oz jam sugar
225g/8oz plain flour, plus extra for dusting
150g/5½oz butter, chilled
25g/1oz icing sugar
1 large free-range egg, beaten
150g/5½oz butter, softened
150g/5½oz caster sugar
150g/5½oz ground almonds
1 large free-range egg, beaten
1 tsp almond extract
300g/10½oz icing sugar
1 tsp almond extract
pink food colouring gel

Steps:

  • For the jam, put the raspberries in a small, deep-sided saucepan and crush them using a masher. Add the sugar and bring to the boil over a low heat until the sugar has melted. Increase the heat and boil for 4 minutes. Remove from the heat and carefully pour into a shallow container. Leave to cool and set.
  • For the pastry, measure the flour into a bowl and rub in the butter using your fingertips until the mixture resembles fine breadcrumbs. Stir in the icing sugar. Add the egg and 2 tablespoons cold water, mixing to form soft dough.
  • Roll out the dough on a lightly floured work surface to the thickness of a pound coin. Line a 23cm/9in fluted flan tin and transfer to the fridge to chill for 30 minutes.
  • Preheat the oven to 200C/180C Fan/Gas 6.
  • Line the pastry case with non-stick baking paper and fill with baking beans or uncooked rice. Bake blind for 15 minutes, then remove the beans and paper and cook for a further 5 minutes to dry out the base. Set aside to cool a little before adding the filling.
  • For the filling, spread the base of the pastry case with 4 tablespoons of raspberry jam.
  • Cream the butter and sugar together until pale and fluffy. Add the ground almonds, egg and almond extract and mix together. Spoon the mixture into the pastry case and smooth the surface using a palette knife.
  • Reduce the oven temperature to 180C/160C Fan/Gas 4 and bake for 25–35 minutes, until golden-brown and a skewer inserted in the centre comes out clean. Remove from the oven and leave to cool completely in the tin.
  • For the icing, sift the icing sugar into a bowl. Stir in the almond extract and about 3 tablespoons cold water to make a smooth, fairly thick icing. Place 3 tablespoons of the icing in a separate bowl and add a little pink food colouring gel to make a raspberry coloured icing. Spoon the pink icing into a small piping bag fitted with a small plain nozzle.
  • When the tart has cooled completely, spoon the white icing on top and spread to form a smooth surface. Pipe parallel lines of pink icing over the white icing, then drag a cocktail stick through the lines (at a 90 degree angle to the lines) to create a feathered effect. Leave to set, then serve in slices.

    Reduce the oven temperature to 160°C/140°C fan/Gas 3.

    Slice the passionfruit in half and remove the pulp. Sieve the pulp into a large bowl, discarding the seeds. Break the eggs into the bowl, then add the orange juice, double cream and sugar, and beat well until combined.

    Mary’s tips:

    Can be made up to a day ahead.

    Freezes well.

    Transfer the passionfruit custard into a jug, then pour into the pastry case and carefully slide back into the oven. Bake for 35–40 minutes, until the custard is just set in the middle with a very slight wobble.

    Leave to cool, then place in the fridge to chill. Dust with icing sugar and serve at room temperature with cream on the side.

    To make the base, melt the chocolate and butter in a wide-based pan over a medium heat (see note). Remove the pan from the heat, add the crushed biscuits and stir to combine. Press into the base of the tart tin and chill in the fridge while you make the filling.

    To make the filling, place the chocolate and butter in a large heatproof bowl and add the coffee and double cream. Set the bowl over a pan of just simmering water and heat until runny, stirring gently until smooth. Remove from the heat and allow to cool down a little, then mix in the crème fraîche by hand.

    Carefully pour the mixture into the tin on top of the biscuit base and chill for a minimum of 2 hours, or ideally overnight, until set.

    Remove the tart from the tin and place it on a cake stand or plate.

    Serve straight from the fridge.

    To decorate, spoon the whipped cream into a piping bag (if using) and pipe or dollop five large blobs of the cream into the middle of the tart. Sprinkle over the chocolate shavings or grated chocolate and serve in thin slices.

    Cook’s Notes:

    • You’ll need full-fat crème fraîche for this recipe to help the filling set.

    • Be sure not to overheat the chocolate and butter mixture – heat it until it is just warm enough to melt.

    Prepare Ahead: Can be made up to a day ahead and kept in the fridge. Decorate 2 hours before serving.
