CAFE DU MONDE BEIGNETS COPYCAT RECIPE - THE FOOD HAC…

Cafe Du Monde Beignets copycat recipe - The Food Hac… image

A French Quarter tradition since 1862, Cafe Du Monde beignets are probably the most famous beignets in the world.

Provided by Todd Wilbur

Total Time 165 minutes

Prep Time 30 minutes

Cook Time 135 minutes

Yield 21 beignets

Number Of Ingredients 10

3/4 cup warm water (105 to 110 degrees F)
1 1/4 teaspoons active dry yeast
1/3 cup granulated sugar
1/2 cup whole milk
1 egg, beaten
3/4 teaspoon salt
18 ounces (3 1/2 cups) all-purpose flour
2 tablespoons vegetable shortening, melted
Cottonseed oil for frying
Powdered sugar

Steps:

  • Dissolve the yeast and sugar in the warm water in a large mixing bowl, or the bowl of a stand mixer. Let the solution sit for 15 minutes and it will become foamy.
  • Whisk in the milk, egg and salt. Then mix in half of the flour with a large spoon. If using a mixer, use a paddle attachment on low to medium speed.
  • Mix in the shortening.
  • Add the remaining flour and mix with the spoon until you can use your hands, then turn the dough out onto a floured board and knead just until smooth. Don't over-knead or the dough will get too tough. If using a mixer, swap out the paddle for your dough hook and knead just until the dough is smooth.
  • Place the dough in an oiled bowl covered with plastic wrap or a towel in a warm spot to rise for 2 hours. The dough will double in size.
  • Preheat 3 to 4 inches of cottonseed oil in a pan or deep fryer to 370 degrees F.
  • On a heavily floured surface, roll out the dough until it is 1/4-inch thick. Use a pizza slicer or knife to cut the dough into 2 1/2-inch square pieces and fry 3 to 4 pieces at a time in the oil. Immediately after dropping the dough into the oil use a large spoon to gently splash hot oil over the top of each piece. after 30 to 45 seconds, flip all of the beignets over and continue to baste with the oil. After another minute or so, flip the beignets again, and continue to cook until the beignets are a deep golden brown. Continue flipping the beignets over to brown them evenly on both sides. After about 3 minutes, they should be done. Let them drain on a cooling rack or a paper towel-lined plate for a minute, until you can handle them.
  • Serve three beignets on a plate with a very heavy dusting of powdered sugar on top.

Air Fryer Beignets Recipe | Food Network Kitchen | Food ... image

This pillowy New Orleans classic is easy to make at home in your air fryer and uses far less oil than the original. As a bonus, you can use the same sweet yeasted dough to make air fryer doughnuts – just cut into rings and air fry at the same temperature as the beignets. Finish with a dusting of powdered sugar or a quick glaze.

Total Time 2 hours 0 minutes

Cook Time 30 minutes

Yield 20 beignets

Number Of Ingredients 9

2 cups all-purpose flour, plus more for working the dough (see Cook's Note)
6 tablespoons granulated sugar
One 1/4-ounce packet (2 1/4 teaspoons) instant yeast
1/2 teaspoon kosher salt
1 large egg, plus 1 large egg yolk
1/2 cup lukewarm whole milk (about 110 degrees F)
3 tablespoons unsalted butter, melted, plus more for brushing the bowl
1 teaspoon pure vanilla extract
Nonstick cooking spray

Steps:

  • Combine the flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook and mix to combine. Add the egg, egg yolk, milk, butter and vanilla and mix on low to combine. Increase the speed to medium high and knead until the dough forms a loose ball around the hook and is smooth and elastic, about 3 minutes.
  • Transfer the dough to a floured surface and lightly knead by hand just enough to bring it together into a smooth ball. Brush a medium bowl with melted butter and add the dough, turning to coat. Cover and let rise in a warm area until doubled in size, 1 hour to 1 hour 15 minutes.
  • Punch the dough down and roll out on a lightly floured surface to a square slightly larger than 10 inches by 10 inches. Trim the edges with a sharp knife or pizza cutter to make an even square. Cut the square in a 4 by 5 grid pattern to make 20 rectangles. Loosely cover the dough and let rise right on the countertop for about 15 minutes.
  • Preheat a 3.5-quart air fryer to 350 degrees F. Spray the basket with cooking spray and add half the beignets. Spray the beignets lightly with cooking spray. Cook until puffed and golden, about 6 minutes. Remove and repeat with the remaining beignets. Dust the beignets with confectioners' sugar and serve warm.

  • Carefully add the doughnuts to the oil, a few at a time. If they’re too delicate to pick up with your fingers (they may be this way only if you rose them in the oven), use a metal spatula to pick them up and slide them into the oil. It’s O.K. if they deflate a bit; they’ll puff back up as they fry. When the bottoms are deep golden, after 45 seconds to a minute, use a slotted spoon to flip; cook until they’re deep golden all over. Doughnut holes cook faster. Transfer the doughnuts to the prepared plates or racks, and repeat with the rest of the dough, adjusting the heat as needed to keep the oil at 375. Glaze or fill as follows, and serve as soon as possible.

CRULLERS RECIPE - FOOD NETWORK
Sometimes a cruller is a doughnut dough leavened with yeast or baking powder that's shaped into a long twist, deep fried and sprinkled with sugar or glazed with a thin icing. The traditional French cruller is made from pate a choux and is basically hollow. The word "cruller" comes from the Dutch word "krulle" or "krullen," meaning twisted cake.
