3/4 cup mayonnaise (I use Hellman’s)
3 tablespoons horseradish
3/4 lb roast beef (preferably rare)
softened butter
lettuce leaf
vidalia onion, slices
tomatoes, slices
4 kaiser rolls

Steps:

  • Combine mayo with horseradish.
  • Butter rolls – this is important as the butter makes a ‘lining’ to prevent the roll from getting too soggy, and it tastes good too.
  • Fill rolls with layers of remaining ingredients.
  • Season roast beef with lots of salt and freshly ground pepper.
  • Top with mayonnaise.

1 tablespoon dried minced onion
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons dried oregano
1 teaspoon dried rosemary, crushed
1 teaspoon caraway seeds
1 teaspoon dried marjoram
1 teaspoon celery seed
1/4 teaspoon cayenne pepper
1 boneless beef chuck roast (3 to 4 pounds), halved
10 sandwich rolls, split

Steps:

  • Combine seasonings; rub over roast. Place in a 5-qt. slow cooker. Cover and cook on low for 6-8 hours or until meat is tender. Shred with a fork. Serve on rolls.

    1. Preheat the oven to 200ºC/400ºF/gas 6. Wash the parsnips and carrots, trim and chop into even-sized chips. Place in a large roasting dish with 1 tablespoon of olive oil and a pinch of sea salt. Strip in the rosemary and mix well, then roast for 20 to 25 minutes, or until golden and cooked through.
    2. Peel and finely slice the onions. Place in a non-stick frying pan on a medium-low heat with 1 tablespoon of olive oil, cover and cook for 10 to 15 minutes, or until soft and sweet, stirring occasionally. Stir in the butter for added richness, then tip into a bowl, returning the pan to the heat.
    3. Grate the cheese into the pan, add the mustard and let it all melt together.
    4. Toast the bread, then line up 6 slices and divide the onions between them. Lay the beef over the top, then pour over the bubbling oozy cheese. Put the other slices of toast on top and the sandwiches are done.

  • Toss the beef roast in a 6- to 8-quart slow cooker with the rosemary, ½ teaspoon salt and a generous grinding of pepper. Add the pepperoncini with their brine, along with the beef broth. Cover and cook on low until the meat is very tender and easy to pull apart, 7 to 8 hours. When the slow cooker has about 15 minutes left, heat 2 tablespoons butter in a large skillet over medium-high heat. Add the onion, the remaining ¼ teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until tender and lightly browned, about 10 minutes. Remove the roast to a bowl and shred using 2 forks, then return it to the slow cooker. Keep warm. Preheat the broiler. Put the rolls on a baking sheet and spread with the remaining 4 tablespoons butter. Broil until toasted, about 2 minutes. Taste it and adjust ingredients however you wish.To assemble, spread dressing on top and bottom buns. Lay on roast beef or ham, then one or two slices of cheese (I cut them to fit the small buns.) If you're using Cheez Whiz, spread a layer on the top bun. Wrap each sandwich in a foil square, and either keep in the fridge or bake right away.
