Beef-and-Bean Chili Recipe -- How to Make Hearty Beef Chili image

This cowboy-approved beef-and-bean chili recipe is a hearty dinner worthy of the whole family.

4 lb. ground beef
6 garlic cloves, minced
2 8-ounce cans tomato sauce
1 6-ounce can tomato paste
1/4 c. chili powder, plus more to taste
2 tsp. ground cumin
2 tsp. ground oregano
2 tsp. kosher salt, plus more to taste
1/2 tsp. cayenne pepper, plus more to taste
4 15-ounce cans beans (kidney and pinto), drained and rinsed
1/2 c. masa harina (corn flour) or regular cornmeal
Shredded cheddar, crumbled bacon and sliced jalapeños, for topping

Steps:

  • In a large heavy pot, brown the ground beef with the garlic until it’s totally cooked. Drain off most of the excess fat, leaving a little behind for moisture and flavor.
  • Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the liquid level seems low, add up to 1½ cups water to keep the chili from burning.
  • Stir the beans into the chili. In a small bowl, combine the masa harina with 1/2 cup water and stir with a fork until smooth, then stir into the chili. Let simmer for another 10 minutes to thicken. Taste and adjust the seasonings. Top with cheese, bacon and jalapeños.

Butternut squash adds slightly sweet flavor to this classic meatless chili. It's delicious as-is, but you can also add in some corn and bell peppers and substitute black beans for white beans, if you'd like.

2 red bell peppers
3 tablespoons extra-virgin olive oil
1 cup chopped onion
2 teaspoons ground cumin
1 teaspoon crushed red pepper
1 teaspoon paprika
¼ teaspoon salt
4 garlic cloves, thinly sliced
2 cups organic vegetable broth
1 ½ cups (1/2-inch) cubed peeled butternut squash
1 (28-ounce) can no-salt-added tomatoes, undrained and chopped
1 (15-ounce) can pinto beans, rinsed and drained
1 (15-ounce) can cannellini beans, rinsed and drained
1 (15-ounce) can red kidney beans, rinsed and drained
½ cup thinly sliced green onions

Steps:

  • Preheat broiler.
  • Cut bell peppers in half lengthwise. Remove and discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet. Broil 15 minutes or until blackened. Place pepper halves in a zip-top plastic bag; seal. Let stand 15 minutes. Peel and chop peppers.
  • Heat a Dutch oven over medium-low heat. Add oil to pan; swirl to coat. Add onion; cook 15 minutes, stirring occasionally. Stir in cumin and next 4 ingredients (through garlic); cook 2 minutes, stirring frequently. Add bell peppers, broth, squash, and tomatoes; bring to a simmer. Cook 20 minutes, stirring occasionally. Add beans; simmer 25 minutes or until slightly thick, stirring occasionally. Sprinkle with green onions.
