- 1. Put the four lime wedges into a glass, then add the sugar and muddle (squish everything together) to release the lime juice 2. Put the mint leaves on one hand and clap. This bruises the leaves and releases the aroma. Rub the mint leaves around the rim of the glass and drop them in. Use a muddler, bar spoon (or even a rolling pin) to gently push the mint down into the lime juice 3. Half fill the glass with crushed ice and pour in the Bacardi Carta Blanco. Stir the mix together until the sugar dissolves 4. Top up with crushed ice, a splash of the soda water and garnish it with a sprig of mint

I had this drink at a popular chain restaurant and decided to try it at home. I have served it at a couple different gatherings now and it has always been given rave reviews. It's the perfect drink for a hot summer day!

Steps:
- Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
- Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

- TO ORDER Chill a flute, coupe or coupette by filling with ice. Put the rum, lime juice and demerara sugar syrup (see tip) in a little jug with the leaves from the mint and a couple of ice cubes, then stir to chill the mixture. Remove the ice from your glass, then pour in the drink through a sieve, putting a couple of pretty mint leaves back in. Top up with the fizz of your choice and serve. BATCH IT The day before, batch up the rum, lime juice and sugar syrup if you want to be able to make multiple drinks at once.
