One of the most popular side dishes in traditional Austrian restaurants is potatoes with parsley. Traditionally this dish is made by boiling peeled potatoes, but I used red potatoes and I didn't peel them because there's where most of the minerals are stored.

5 Red Potato
1/4 cup Ghee
1 clove Garlic
1/4 cup Italian Flat-Leaf Parsley
to taste Salt and Pepper

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Melt Ghee (1/4 cup) over medium heat. Add Garlic (1 clove) and stir until fragrant.
  • Place Red Potato (5) in a baking dish, drizzle garlicky ghee over top of potatoes and stir to make sure they are evenly coated.
  • Bake in oven for 35-40 minutes until fork tender.
  • Chop the Italian Flat-Leaf Parsley (1/4 cup).
  • Remove from oven and sprinkle fresh parsley over top of potatoes. Season with Salt and Pepper (to taste). Serve immediately.

2 tablespoons butter or margarine, melted
1 tablespoon chopped fresh parsley
Salt and pepper

Steps:

  • Add 1 inch of water to Dutch oven. Cover and heat to boiling over high heat. Add potatoes. Cover and heat to boiling, reduce heat. Cook covered 20 to 25 minutes or until tender; drain and return to Dutch oven.
  • Drizzle butter over potatoes. Sprinkle with parsley, 1/4 teaspoon salt and 1/8 teaspoon pepper. Stir gently to coat potatoes.
