Large sea scallops are combined with garlic, shallots, butter, and bread crumbs then baked to perfection. Being from Maine, we love our seafood, and this is one of the greats!

Number Of Ingredients 10

16 sea scallops, rinsed and drained
5 tablespoons butter, melted
5 cloves garlic, minced
2 shallots, chopped
3 pinches ground nutmeg
salt and pepper to taste
1 cup bread crumbs
4 tablespoons olive oil
¼ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.
  • In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.
  • Bake in preheated oven until crumbs are brown and scallops are done, about 11 to 14 minutes. Top with parsley, and serve with lemon wedges on the side.

Italian Fresh Herb Baked Ocean Perch with Chips image

Thick sliced filet and thin sliced potatoes makes for the perfect combination. Try this recipe with our Wild Icelandic Ocean Perch for a delicious and healthy alternative to your typical fried fish and chips!

Cook Time 30 minutes

Number Of Ingredients 8

4 thick slices of Ocean Perch
5 medium potatoes
Oregano to taste
Salt to taste
¼ cup fresh chopped Italian parsley
2-3 sprigs fresh chopped rosemary
¼ cup olive oil (more or less to taste)
1 clove garlic minced

Steps:

  • Pre-heat oven to 350°F.
  • In a medium bowl soak potatoes in cold water for approximately 15-20 minutes, rinse and drain well and towel dry. Place potatoes back in dried medium bowl.
  • Thinly slice potatoes then toss with oregano, salt, rosemary, garlic, and olive oil. Place potatoes on non-stick cookie sheet and bake for 20 minutes. Then remove from the oven.
  • Place fish fillets on the cookie sheet with the potatoes, sprinkle the fillets with salt, oregano, and parsley, rosemary and garlic. Place cookie sheet back in the oven and bake for an additional 10-12 minutes.
  • Take cookie sheet out of the oven and serve.

  • 1. Heat oven to 180°C. Season the trout cavity with salt and pepper and drizzle with 1 tbsp oil. Lay the lemon slices inside across the cavity of the fish. Stuff with half the thyme and parsley.

    2. Using kitchen string, firmly tie the trout crosswise about 4 times, spacing evenly along the fish, tying and knotting loose ends

    3. Pick leaves from remaining thyme and parsley and chop. Mix herbs with remaining oil and some seasoning. Rub mixture over the outside of the fish, and then transfer to a roasting tray lined with baking paper.

    4. Bake trout for about 35-40 minutes. Remove from the oven, cover with foil and rest for about 10 minutes. Serve whole at the table.

    Serve with Neil's sweet potato, garlic and rosemary gratin (to balance the lemon zing).
