1 tablespoon olive oil
2 cloves garlic, diced
1 tablespoon whole wheat flour
1 teaspoon freshly cracked black pepper
¾ cup 2% reduced-fat milk
2 tablespoons grated Parmesan cheese
1 (12 inch) prepared whole wheat pizza crust (such as Boboli®)
1 cup baby spinach
1 cup shredded reduced-fat mozzarella cheese
½ cup diced cooked chicken
½ cup artichoke hearts, drained
½ cup crumbled reduced-fat feta cheese
2 strips cooked bacon, crumbled
1 teaspoon red pepper flakes

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add garlic; cook and stir until fragrant, about 30 seconds. Sprinkle in flour and black pepper; cook, whisking constantly, for 1 minute. Pour in milk; whisk constantly until sauce thickens, about 3 minutes. Remove from heat; stir in Parmesan cheese.
  • Lay pizza crust on a piece of parchment paper. Spread sauce over crust. Add spinach in an even layer. Sprinkle mozzarella cheese evenly on top. Cover with chicken, artichoke hearts, feta cheese, and bacon. Sprinkle red pepper flakes on top.
  • Bake in the preheated oven until cheese is melted and golden, about 12 minutes.

1 frozen cauliflower pizza crust
2 tablespoons tomato sauce with oregano and basil
¼ cup shredded mozzarella cheese
¼ cup shredded provolone cheese
8 cherry tomatoes, halved
? cup chopped sweet onion
? cup fresh spinach
¼ cup chopped black olives
3 marinated artichoke hearts, drained and chopped
2 cooked bacon strips, chopped
2 mushrooms, chopped

Steps:

  • Place a pizza stone in the oven and preheat to 425 degrees F (220 degrees C).
  • Place pizza crust on a sheet of parchment paper. Top with tomato sauce. Mix mozzarella and provolone cheeses together and sprinkle 1/4 cup over the pizza. Layer cherry tomatoes, onion, spinach, black olives, artichokes, bacon, and mushrooms on top. Sprinkle remaining 1/4 cup cheese on top.
  • Slide pizza onto the hot pizza stone. Bake until crispy and golden brown, 13 to 15 minutes. Remove from the oven, slice, and serve.

  • Place the dough on a heavily floured surface and stretch and pull, using your hands or a rolling pin, into about a 14-inch round. Place on a lightly floured pizza peel or rimless baking sheet. Cover with the toppings, being careful not to press on the dough and weigh it down: the bacon first, then the artichoke hearts, the shrimp, the cheese and finally the oregano, leaving roughly a 1/2-inch border. Shake the pizza peel slightly to make sure the dough is not sticking. (Gently lift any sections that are sticking and sprinkle the peel with flour.) Slide the pizza directly onto the baking stone in one quick, forward-and-back motion. Cook until the crust has browned on the bottom and the top is bubbling and browning in spots, about 7 minutes.
