Steps:
- Preheat oven to 350 degrees. For the cake, combine cake mix, margarine, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for four minutes on medium-high. Add drained oranges and beat again until pieces are broken up and small. Pour batter into greased and floured 9 x 13 inch baking pan and bake for 25 to 30 minutes, or until golden brown and set. Remove from oven and cool completely. If desired, turn out cake onto a large platter.Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping. Stir in drained pineapple. Spread on cooled cake and refrigerate several hours. To serve, cut cake into squares and top each square with a mandarin orange slice.
PIG LICKING GOOD CAKE | JUST A PINCH RECIPES
My two grown girls love this cake. My wife occasionally asks me to make it only to give it away to someone special. I enjoy making this cake and just baking everything. I included the note about cooling the cake completely because the 1st time I made this cake (I added to the recipe) because I did not wait long enough for the cake to cool and the frosting ran off the cake and around the platter. LOL

Steps:
- Mix ingredients. Pour into either three 8" round cake pans, 2 round pans or 1 loaf pan.
- Bake 30 to 35 minutes.
- While cake is baking, mix frosting and refrigerate. Mix Cool Whip, dry pudding mix, and un-drained pineapples.
- Please remember to cool cake completely then spread frosting.
