Gilafi Seekh Kebab (kabab) is made by minced chicken marinated with spices and herbs. These minced chicken are cylindrically placed in a shewer and covered with finely chopped bell peppers.

200 gm chicken leg boneless
1 teaspoon ground cumin( jeera powder)
1/2 teaspoon garam masala
1/4 teaspoon black pepper powder
1/2 teaspoon lemon juice
8 - 9 garlic cloves
1 inch ginger
1-2 green chili ( or paste)
2 teaspoon fresh mint leaves
1 teaspoon Cilantro leafs ( Coriander
1/3 teaspoon chat masala
1/2 teaspoon pure ghee ( optional)
Salt as per taste
For the Gilafi
1/2 medium size red bell pepper
1/2 medium size yellow bell pepper
1/2 medium size capsicum
1/2 medium size onion ( optional

Steps:

  • How to make the recipe Preparation
  • Roughly cut the chicken pieces and mix with ginger, garlic, green chillies and mint leaves.
  • Using a meat mincer make a fine mince with the above chicken pieces.
  • Take the mince in a mixing bowl and mix with lemon juice, cumin powder, garam masala, black pepper powder, chat masala, salt and coriander leaves.
  • Give everything a fine mix by kneading two to three times.
  • Keep it refrigerated to marinate for one hour. Meantime chopped the bell peppers, capsicum and onion.
  • Making the Gilafi Seekh
  • After the marination period, bring the minced chicken and knead again and divide into small equal size balls
  • Take a Shewer and with a wet hand start to shew the mince chicken around the shewer in cylindrical shape
  • Shewering with wet hand not help to shew the kebab smoothly but also help not to get stick the mince in hands.
  • Now take the chopped bell peppers and start to cover the chicken Seekh by placing them all over the Seekh
  • Slightly press while placing them over the Seekh Kebab.
  • If using wooden sticks then soak them in water for 30 minutes and start to shewer.
  • Cooking the Gilafi Seekh Kebab
  • Preheat oven to 240° C for 15 minutes and line a baking tray with aluminum foil and place the Gilafi Seekh Kebab on it. Bake them for 15 minutes or till done.
  • While baking remove the tray after 10 minutes and flip the Seekh Kebabs. Brush some oil or butter on them and bake.
  • Using charcoal Tandoor :- place the shewer inside a preheated tandoor and cook for 7 - 8 minutes.
  • While cooking rotate the Shewer and brush some butter on them.
  • When Seekh Kebab start to become firm and juice start to run from them, remove them from tandoor.
  • Using a kitchen towel remove them from the Shewer and cut into pieces.
  • Sprinkle some chat masala and cilantro leaves and serve hot with mint chutney, lemon wedges and onion slice

Raw papaya is also added to the marination for giving beef seekh kabab a very nice tenderized texture. Chopped green chillies are added to the marination for more taste and spice. It takes only 45 minutes to prepare beef seekh kabab. Beef seekh kabab is available at many restaurants all over Pakistan. It has become a famous recipe. People usually enjoy this recipe at dinners. This recipe provides you with an awesome taste of a of beef seekh kabab at home. You can also make seekh kabab in your gatherings. Beef seekh kabab can be served with garlic naan or hot tandoori naan. You can also make a salad along with this recipe. The smoke of coal acts as a cherry at top of this recipe. Number Of Ingredients 1

1 kilogram Minced Beef (Keema) 1 medium Onion (grounded) 1 more medium Onion (chopped) 4 Green Chillies (Hari Mirch) 1 tsp. Red Chilli Powder (Pisi Lal Mirch) 1 tsp. Green Papaya (Papita) (crushed to a paste along with the skin) 1 bunch of Fresh Coriander Leaves (Hara Dhania) (chopped) 8 Cardamom Pods (Ilaichi) 1 tsp. Black Pepper (Pisi Kaali Mirch) (freshly ground) 1 tsp. Garam Masala Powder 4 tbsp. Chick Pea Flour (freshly ground) 1 Egg 2 tbsp. Milk Powder 8 Allspices (Kabab Cheeni) (ground) Salt (to taste) 2 tbsp. Dalda Banaspati or any Cooking Oil

Steps:

  • 1. In a bowl combine minced meat with all ingredients except for the oil and mix well. Knead with hands for about 5 to 10 minutes. (It is very important to knead it because the papaya must be mixed well in order to make the kababs soft.) Set aside for 2 hours. 2. Knead once again. Take a small portion of the mixture in hands and put on a barbecue skewer. These kababs can also be roasted directly on flame for a minute and later fried with a little oil in a frying pan. Note: For smearing extra banaspati or oil on the kababs, tie a small piece of muslin to a stick and dip it in the oil and spread on the kababs.
