No Cholesterol Almond Cookies | Just A Pinch Recipes image

This is the second original cookie recipe I have developed to assist with a healthier diet and the lowering of cholesterol in the diet. This is an amazingly delicious and simple cookie. You could dress it up a bit by adding some chopped dried cranberries and some chopped candied ginger...but they are perfectly good plain.."just as is". I hope you love these new healthier desserts!

Number Of Ingredients 10

3/4 cup(s) almond meal
1 1/2 cup(s) all purpose flour
1 cup(s) sugar
1/2 teaspoon(s) salt
1 1/4 teaspoon(s) baking powder
3/4 teaspoon(s) baking soda
2/3 cup(s) canola oil
2 large egg whites
1/2 teaspoon(s) vanilla
1/4 teaspoon(s) almond extract

Steps:

  • Mix dry ingredients in a large bowl.
  • Mix oil, eggs and extracts in a separate bowl. Combine with the dry ingredients just until the dough comes together.
  • Chill dough an hour.
  • Make 1 1/4 - 1 1/2inch balls of dough. The dough will need a good squeeze to stick together. Place 12 balls of dough on an ungreased cookie sheet. Gently flatten each with a fork.
  • Bake in a 375 degree oven (350 for a convection oven)for 11 minutes.
  • Remove from oven and rest 2 minutes before transferring to a rack to cool completely. Store airtight. Makes 32 cookies.
