Sweet, crunchy, and addicting, these apricot thumbprint cookies make a sensational addition to any season. With a sweet and tart taste all their own, these treats give a fun twist to butter cookies. While the orange-hued apricot preserves offer a bright pop of color to any spread, we've caught wind of some Christmas-crazy readers swapping in cranberry sauce for its equally merry and bright shade. If feeling festive, you can try a mixture of the two holiday-favorite flavors.By rolling the cookie dough in chopped almonds, you're ensuring a heavenly crunchiness in every bite that's offset by the tender cookie and sweet jam filling. 2 cups butter, softened
2/3 cup granulated sugar
2/3 cup firmly packed light brown sugar
1 teaspoon almond extract
1/4 teaspoon kosher salt
4 2/3 cups all-purpose flour
1 1/2 cups chopped sliced almonds
Parchment paper
3/4 cup apricot preserves

Steps:

  • Beat first 5 ingredients at medium speed with an electric mixer 3 to 5 minutes or until creamy. Add flour; beat just until blended.
  • Shape dough into 1-inch balls (about 1 Tbsp. per ball), and roll in almonds. Place 2 inches apart on 2 parchment paper lined-baking sheets. Press thumb or end of a wooden spoon into each ball, forming an indentation. Chill 20 minutes.
  • Preheat oven to 350°. Bake 15 minutes or until bottoms are light golden brown. Cool on baking sheets 10 minutes; transfer to wire racks, and cool 10 minutes. Spoon 1/2 tsp. apricot preserves into each indentation.

Cream Puffs
1 cup water
1/2 cup Land O Lakes® Butter
1 cup all-purpose flour
4 large Land O Lakes® Eggs
Filling
1 cup Land O Lakes® Heavy Whipping Cream
1 (8-ounce) container whipped cream cheese
1/2 cup apricot or peach spreadable fruit preserves
1/3 cup powdered sugar
1/2 teaspoon vanilla
Topping
2 tablespoons powdered sugar
1/2 cup apricot or peach spreadable fruit preserves, melted

Steps:

  • Heat oven to 400°F.
  • Combine water and butter in heavy 2-quart saucepan. Cook over medium heat until mixture comes to a full boil. Stir in flour vigorously until mixture forms a ball. Remove from heat. Cool mixture 10 minutes. Beat in eggs, one at a time, until smooth.
  • Drop 1/4 cupfuls dough, 3 inches apart, onto ungreased baking sheet. Bake 30-35 minutes or until puffed and lightly browned. Pierce each puff gently with fork to allow steam to escape. Cool completely.
  • Beat chilled whipping cream in chilled bowl on high speed, scraping bowl often, until soft peaks form. Add all remaining filling ingredients; continue beating until fluffy.
  • Cut off tops of puffs; fill each with about 1/4 cup filling mixture. Cover with tops of cream puffs. Sprinkle with powdered sugar; drizzle with 1/2 cup melted spreadable fruit.
