Adding grated apple, a pectin-packed fruit, naturally jells the jam and gives it a pleasant tartness.

Yield Makes about 1 1/2 cups

Number Of Ingredients 4

1 pound fresh (or frozen, thawed) hulled, quartered strawberries
2/3 cup sugar
1 large Granny Smith apple, peeled, coarsely grated
1 tablespoon fresh lemon juice

Steps:

  • Combine 1 pound fresh (or frozen, thawed) hulled, quartered strawberries and 2/3 cup sugar in a large heavy skillet. Stir in 1 peeled, coarsely grated large Granny Smith apple. Cook over medium-low heat, stirring and breaking up strawberries, until sugar dissolves. Simmer until jam is thickened, 10-15 minutes. Stir in 1 tablespoon fresh lemon juice. Transfer to a bowl or jar; let cool. Cover and chill until set, about 2 hours. Keep chilled; serve within 2 weeks.

My "basket" ingredients: I used Cinnamon Danish Swirl, Fuji, and Strawberry Ripe to make the main flavor for the jam. I lowered the CDS down to meld together with the apple and create a "baked cinnamon apple" and the strawberry ripe is there to round it out and be just a bright fruit to and I bent the apple with the cinnamon to make the cinnamon play with the strawberry. My "pantry" ingredients: I used Liquid amber to create the "jam" consistency it helps bend the cinnamon to work with the strawberry. I used Sugar Cookie to give the Sweet bakery taste that jam has. I am not sure how to describe that. And FA Meringue is to add just a hint of sugar to the whole thing

  • In a large bowl, combine the apples and strawberries; drizzle with lemon juice. Combine sugar and flour; sprinkle over fruit and toss lightly. , Preheat oven to 450°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling. Roll remaining dough to a 1/8-in.- thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. , Combine sugar and cinnamon; sprinkle over crust. Cover edges loosely with foil. , Bake 10 minutes; reduce heat to 350°. Remove foil and bake until crust is golden brown and filling is bubbly, 35-40 minutes longer. Cool on a wire rack. If desired, serve with whipped topping.

  • 1 1/2 c Unsweetened bottled apple -juice 1 pt Fully ripe strawberries 3 1/2 c Granulated sugar 1 Pouch liquid fruit pectin Pour apple juice into a preserving kettle or large saucepan. Thoroughly crush the barries, using a potato masher, one layer at a time; measure 1/2 cup prepared berries; add to apple juice; add sugar. Place pan over high heat; bring to boil, stirring continuously; at once, stir in liquid fruit pectin; bring to a full rolling boil; boil hard for 1 minutes,stirring continuously; remove kettle from heat. Skim off foam with a metal spoon; pour quickly into hot sterilized jars, leaving 1/2 inch head space; seal with melted paraffin wax; cover with clean lids. Stor in a cool, dark, dry place. **NOTE** Bottled Strawberry cocktail can be substituted for the fresh strawberry juice, giving a slightly sweeter product. Makes 3-1/2 cups.
