Hot Cocoa with Almond Milk Recipe: How to Make It image

Change up ordinary hot cocoa by stirring some dark baking cocoa into vanilla almond milk. Top it off with a plain large marshmallow or berry marshmallow creme, if you like, and add your favorite pretty sprinkles. —Cindy Reams, Philipsburg, Pennsylvania

1/2 cup sugar
1/2 cup dark baking cocoa or baking cocoa
2 cartons (32 ounces each) vanilla almond milk
1 teaspoon vanilla extract
Optional: Large marshmallows or strawberry marshmallow creme, and assorted sprinkles

Steps:

  • In a large saucepan, combine sugar and dark baking cocoa; gradually whisk in almond milk. Heat until bubbles form around sides of pan, whisking occasionally. Remove from heat; stir in vanilla. If desired, serve with large marshmallows or marshmallow creme, and sprinkles.

Make your own almond milk to use as a substitute for dairy milk. It's simple to make and tastes great in porridge, smoothies and hot drinks

150g whole almonds

Steps:

  • Put the almonds in a large bowl and cover with water, then cover the bowl and leave to soak overnight or for at least 4 hrs.
  • The next day, drain and rinse the almonds, then tip into a blender with 750ml cold water. Whizz until smooth. Pour the mixture into a muslin-lined sieve over a jug and allow it to drip through. Stir the mixture gently with a spoon to speed up the process.
  • When most of the liquid has gone through into the jug, gather the sides of the muslin together and squeeze tightly with both hands to extract the last of the milk.

This exquisite recipe came to The Times in a 2001 article by Amanda Hesser about the first meal her now mother-in-law, Elizabeth Friend, prepared for her. The meal ended with this simple almond cake. Ms. Hesser wrote: “It had a crust, fragile like a dry leaf, that led to a moist, downy layer of ground almonds and sugar. It was a perfect dessert. And it punctuated one of the great meals of my life.” It's not the prettiest cake in the world – Ms. Friend called it “the Shar-Pei of cakes” because it crumbles on the edges and falls in the middle – but it is flawless otherwise. If you care about looks, dust it with confectioners’ sugar and top it with fresh berries as we've done in the picture. It also improves with age and can be made 1 to 2 weeks ahead. Store it covered in or out of the fridge. Finally, this recipe makes two 8-inch cakes, so give one away or freeze one for a rainy day.
