Vanilla and Almond Frosting Recipe - Food.com image

You can use the base of this recipe to make almond and/or vanilla buttercream frosting. The vanilla works wonderfully with most any cake flavor. The almond is highly recommended with a chocolate or devil's food cake. Note that the entire recipe makes 7 1/2 cups of frosting. I discovered this recipe in Bon Appetit, 2004.

3 cups unsalted butter, room temperature
10 1/2 cups powdered sugar (2 1/2 to 2 3/4 pounds)
3 tablespoons whipping cream
1 1/2 teaspoons vanilla extract
1 teaspoon vanilla extract
1 teaspoon almond extract
6 drops yellow food coloring

Steps:

  • For base frosting:.
  • Using electric mixer, beat butter in large bowl until fluffy.
  • Gradually beat in sugar, then cream and vanilla.
  • If making both frostings: Divide between 2 bowls.
  • For vanilla frosting:.
  • Mix 1 teaspoon vanilla into 1 bowl of base frosting.
  • For almond frosting:.
  • Mix almond extract into second bowl of base frosting. Mix in yellow food coloring, 1 drop at a time, until desired shade is reached.

If you follow Marianne's directions, you'll find this almond cake recipe is one of the moistest, most delicate cakes you've ever tasted. The cake has a slight almond flavor and the frosting is rich and thick. It's super simple made with simple ingredients most bakers have on hand. Very yummy!

1 cup(s) butter
1 cup(s) water
2 cup(s) flour
2 cup(s) sugar
1 teaspoon(s) baking soda
1 1/2 teaspoon(s) almond extract
1/2 cup(s) sour cream
2 - eggs
ICING:
1/2 cup(s) butter
1/4 cup(s) milk
3 1/2 cup(s) powdered sugar
1 teaspoon(s) almond extract

Steps:

  • Preheat over to 375 degrees. In small sauce pan, add water and butter; bring to a boil.
  • In mixing bowl, add flour and sugar. Pour boiling water and butter mixture over flour and sugar. Mix well.
  • Add baking soda. Add extract. Add sour cream. Add eggs.
  • Pour into prepared 9x13 pan. Bake 20-25 minutes until middle is set.
  • Let cool 20-30 minutes.
  • Icing: Bring butter and milk to a boil. Put powdered sugar and extract in a mixing bowl. Pour butter/milk mixture into bowl with sugar and extract and mix.
  • Pour over cake and let sit for 20 minutes before serving.
